Recipe Ingredients

Bottle gourd 1 kg
Sugar 1/2 cup
Sugar 100 gm
Reduced milk (Khoya) 250 gm
Semolina 1 tbsp
Almonds and pistachio sliced 1 tbsp each
Saffron 1/4 tsp
Green food color (powder) 1/4 tsp
Green cardamom powder 1/2 tsp

Recipe Method

Peel bottle gourd and grate it.
Fill a pan with water and add green color and grated bottle gourd to it and boil for 10 minutes.
Drain, cool and add sugar, mix well.
Cook khoya in a wok on very low heat.
Keep stirring constantly for about 10 minutes.
Now add semolina and immediately remove from heat, cool completely.
In another pan add boiled bottle gourd with 1/2 cup sugar.
Cook on low heat while stirring.
Then add saffron and cardamom powder.
Add in the khoya mixture, mix well.
Pour the mixture in a greased tray and level it.
Sprinkle almonds and pistachio on top.
Refrigerate, cut into pieces and serve.
