Recipe Ingredients
650 grams fish fillets
3 onions, sliced
1 red Thai chili, chopped finely
1 tsp fresh ginger, grated
3 tbsps Oil
4 garlic cloves, crushed
1/2 tbsp ground cumin
1/2 tbsp paprika
1 tsp ground turmeric
300 grams whole tomatoes
1/2 cup coconut cream
to taste Salt
6 tbsps fresh coriander, chopped
2 tbsps fresh mint, chopped
Recipe Method
Heat oil in a wok, add onion, garlic, ginger, chilli and spices and cook until onion softens.
Add crushed tomatoes and bring to boil.
Reduce heat, simmer until sauce thickens.
Add fish and coconut cream, bring to a boil.
Reduce heat, simmer until fish is cooked
Stir in coriander and mint.
Serve with boiled rice.
