Recipe Ingredients
185 ml can creamy evaporated milk
3/4 cup caster sugar
2 large navel orange, finely grated rind and juiced & extra large navel orange cut into segments
2tsp gelatine powder
6 Woolworths Select Brandy Snap Baskets
Recipe Method
Chill evaporated milk in the freezer for 1 hr. Combine sugar, orange rind and 1 cup orange juice in a saucepan and place over medium heat. Stir until sugar has dissolved and mixture comes to the boil. Reduce heat and simmer for 4 mins. Remove form heat.
Whisk gelatine and 2tbs cold water with a fork in bowl. Stand for 2 mins. Stir into hot orange syrup until dissolved. Cool for about 30 mins or until beginning to thicken.
Pour chilled evaporated milk into a bowl. Using an electric hand beater, beat for 3 mins or until thick and fluffy. Add orange mixture to milk. Gently stir with a large metal spoon until combined. Place in refrigerator to set. Spoon mousse into brandy baskets. Remove skin and pith form extra orange. Cut segments from orange and place a few slices onto each mousse. Serve
