Orange squash
Orange rind
Cornflour
Brandy
PROCESS
Marinate duck with olive oil,garlic,salt and thyme
Chop of unnecessary portion of the duck
Into a baking tray
Add sliced onion
Add crushed garlic
Add sliced celery
Add sliced root vegetables
Add slice carrot
Add marinated duck
Add olive oil
Bake it for 2 hours
Brush duck with butter
For the sauce
Into a saucepan add butter
Add thyme
Add star anise
Add cinamon
Add cloves
Add orange juice
Add orange squash
Add grated orange rind
Add salt
Add corn starch
Add burnt brandy
For presentation
Serve it hot by adding sauce into the duck.
