Chicken Risotto



INGREDIENTS
Olive oil 3 tbsps
Chopped Garlic 1 tsp
Chopped Onion 1 medium
Boneless chicken strips 1 cup
Salt to taste
Black pepper powder 1 tsp
Red chilli flakes 1 tsp
Risotto Rice 1 cup
Butter 1 tablespoon
For Garnish
Few sprigs of parsley
Fresh cream

PROCESS
Heat 2 tbsp olive oil in a non-stick pan. Add half the chopped garlic and sauté till brown.
Add half chopped onions and sauté till pink.
Add chicken strips and sauté for a minute.
Add salt, black pepper powder and red chilli flakes and sauté till chicken is lightly brown.
Remove the chicken mixture into the bowl.
In the same pan add remaining olive oil and garlic and sauté till fragrant.
Add remaining onion and sauté till pink in color.
Add risotto rice and sauté till a minute and add chicken stock and mix well. Add salt if required.
Cover and cook till rice is cooked. To the rice add the chicken mixture and mix well.
Add butter and mix well.
Serve hot garnish with parsley sprigs and fresh cream.
