INGREDIENTS
3 lady fingers
4 - 6 wanton sheets
¼ cup cornstarch
Oil for frying
For Filling
2 tbsp oil
1 tsp cumin seeds
½ tsp mustard seeds
1 tbsp chopped garlic
1 tsp chopped green chilli
2 tbsp gram flour
1 tsp red chilli powder
1 tsp turmeric powder
½ tsp coriander powder
For Garnish
Sweet soya sauce as required
1 tsp sesame seeds
Green chutney as required
Red chilli powder a pinch
PROCESS
To prepare filling in a pan heat oil; add cumin seeds, mustard seeds, chopped garlic, chopped green chilli, gram flour, red chilli powder, turmeric powder, coriander powder, oil and mix well.
Chop off lady fingers head and tail, and slit them. Further fill the lady fingers with the prepared filling.
Chop the wanton sheets into fine juliennes and add to the bowl, mix cornstarch with it.
Apply refined flour and water batter to the stuffed lady fingers and coat with the wanton sheets juliennes.
Fry them in hot oil for 5 to 7 minutes until golden brown; remove on a tissue paper and sprinkle red chilli powder.
Place sweet soya sauce on the centre of the plate and add sesame seeds in it.
Decorate the plate with green chutney, place crispy bhindi wantons and sprinkle red chilli powder.
