Ingredients:
1 1/4 cup flour
1/2 tsp baking powder
Pinch salt
Zest of one lemon
1cup oil /( 200 grams butter softened)
3/4 cup caster sugar
1/2 cup lemion juice
Icing:
Whipping cream 1/2 cup
2 tbs Icing sugar (here you must use icing sugar to make it stiff)
Drop of vanilla essc
Method:
Mix the sugar, butter, lemon juice, zest and eggs untill pale and fluffy with a beater. Sift the dry ingredients and mix into the batter, fold with a spatula and bake for 18~20 mins at 180°C.
For the frosting mix all the ingredients with a beater untill stiff, and frost the cupckaes once cooled.
You can have the cup cakes without the frosting aswell they taste so fresh specially with evening tea
