INGREDIENTS
3 - 4 tbsp peanut oil
2 tsp mustard seeds
2 tsp cumin seeds
2 tsp red chilli flake
2 medium finely chopped onion
2 tsp finely chopped garlic
2 tsp finely chopped ginger
2 tsp curry powder
1 tsp turmeric powder
1 tsp roasted cumin powder
1 cup peeled chopped pumpkin
1 cup soaked split red lentil
Salt to taste
3 - 4 tsp coconut cream
For sprinkle
Coriander leaves
Mint leaves
For garnish
Lemon wedges
Mint leaves
Finely chopped coriander leaves
Roasted cumin powder
PROCESS
Heat peanut oil in a pan.
Saute mustard seeds, cumin seeds, red chilli flakes and onion in it.
Next, add garlic and ginger in it, saute them.
Now, mix curry, turmeric and roasted cumin powder along with water in a small bowl to make a paste.
Saute the prepared paste in the pan spices.
After saute’d, boil the pumpkin and split red lentil in it.
After slightly boiled, mix water, coriander and mint leaves in it to cook for 8 mins – 10 mins.
After cooked, add salt and coconut cream in the dal.
Garnish the prepared dal with lemon wedges, mint leaves, chopped coriander and roasted cumin powder.
Your Red Lentil with Squash is ready.
