Spanish Omelette



INGREDIENTS
For omelette
½ medium onion
10 - 12 slices potato
Crushed pepper to taste
4 eggs
1 ½ cup milk
2 - 3 tbsp finely chopped green beans
1 tbsp finely chopped red capsicum
1 tbsp finely chopped tomato
Salt to taste
¼ tsp chopped green chilli
1 tbsp parsley
½ medium chopped onion
Olive oil for saute
For garnish
Prepared tomato salsa
Browned onion
Finely chopped parsley

PROCESS
Heat olive oil in a pan, add chopped onion and fry them.
Now cook potato slices and crushed black pepper in it.
Meanwhile, whisk eggs in a different bowl.
Now add milk in the bowl and whisk it.
When potato turns soft add green beans, chopped red capsicum, tomato, and salt in the pan, and toss them.
Put salt in the eggs and milk mixture.
When vegetables are slightly cooked add chopped green chilli and parsley in the pan and toss them.
Pour prepared mixture of milk and egg in the pan.
Cook it for 1 ½ mins - 2 mins on flame.
Now keep it in open oven for 2 mins on 200 degree C.
Keep prepared tomato salsa on the omelette.
Garnish it with chopped parsley and browned onions.
Your Spanish Omelette is ready.
