Subzi Empanadas



INGREDIENTS
1 cup leftover vegetable
2 tbsp pine nuts
For dough
¼ cup orange juice
1 tsp yeast
2 tbsp yellow colour
2 cups refined flour
1 tsp oil
Refined flour to dust
Oil to glaze
Oil for frying
For tamatar salsa
3 roasted tomatoes
1 tbsp orange juice
1 tsp oil
Salt to taste
Crushed black pepper to taste
1 tbsp chopped ginger
1 tbsp chopped garlic
2 tbsp chopped green tomatoes
1 tbsp chopped spring onion
1 tbsp chopped onions
1 tbsp chopped red bell pepper
1 tbsp chopped green bell pepper
1 tbsp chopped coriander
1 tsp cumin powder
For sauce
½ cup mayonnaise
¼ cup chilli sauce
For garnish
8 - 10 rice papad
Celery as required

PROCESS
Chop the leftover vegetable.
Chop pine nuts and mix it with the vegetable and remove in a bowl.
To prepare dough in a bowl add orange juice, water, yeast, yellow colour, refined flour and knead to dough. Apply oil to the dough and knead again. Rest the dough for 10 to 15 minutes.
To prepare bhune hue tamatar ka salsa, remove the peels of the roasted tomatoes and blend it in the mixie. Add orange juice, oil, salt, crushed black pepper and blend it again.
Now add chopped ginger and garlic and blend it again. Mix salt in it.
Remove the mixture in a bowl and add chopped green tomatoes, chopped spring onion, chopped onion, chopped bell peppers, chopped coriander, cumin powder and mix well.
Prepare dumplings of the prepared dough. Dust refined flour over it and roll it to thin sheet. Cut it into circle shape with the help of ring mould.
Wet the edges of the circle shape sheets. Stuff the vegetable and pine nuts mixture in it and seal with the help of a fork.
On a baking tray dust refind flour and place the prepared empanadas on it.
Glaze the empanadas with oil.
Bake the empanadas in oven at 180 to 200 degree Celsius for 10 to 12 minutes.
Deep fry one empanada in hot oil. Also deep fry the rice papads.
Once baked remove the subzi empanadas from the oven and glaze them with oil.
To make sauce mix mayonnaise and chilli paste.
Decorate the plate with the prepared sauce and place the baked empanadas.
To garnish place celery on the rice papads. Add salt and glaze with oil.
Subzi empanadas are ready.
