Eggs & Potato curry



Ingredients
5-6 egg-boiled
3 potato-medium
1 large onion-paste/grated
Salt to taste
1/2 tbs red chili powder-less/more
1/2 tsp turmeric powder
1/3 cup oil
1/2 tbs garlic/ginger-paste
1 large tomato- chopped/grated/purée
1/2 tsp tomato paste-optional
1 tsp garam masala
Some chopped green chilies
Some coriander leaves - chopped
Water as required

Method
Heat oil in a pot add onion paste sauté for 2-3 minutes, then add in salt, red chili powder, turmeric powder, garlic-ginger paste along with splash of water, add chopped/puréed/grated tomatoes+tomato paste, cook for 5minutes/until oil separates, then add potato(at this point you can add par boiled potatoes too) add some water(add water according to your desired amount of gravy) cover & cook until the potatoes are tender, then add boiled eggs+garam masala and turn off the heat.
Sprinkle some coriander leaves & chopped green chilies on top.
Serve with paratha/Naan bread/pulka.
