Ingredients
1 can of chickpea/garbanzo beans
1 can of red kidney beans
1 can of sweet corn
1 medium onion-diced
1 large tomato-diced
1 large cucumber-diced
1 medium capsicum-diced
For the dressing
4 tbs olive oil
2 tbs lemon juice
1 tsp freshly ground black pepper
1 tsp sugar
Salt to taste
1 tsp mustered paste
1 clove of garlic-minced
Directions
In a large bowl add all salad ingredients give them a good toss set them a side.
For the salad dressing:
In a bowl add all dressing ingredients mix mix mix.
Pour this salad dressing over the salad and toss well with spoon, put in serving dish, keep it in refrigerator and serve chilled, garnish with spring of mint on top.
