Ingredients
1- For The Kachori
2 cups whole wheat flour (gehun ka atta)
1 cup semolina (rava)
1 cup besan (bengal gram flour)
salt to taste
whole wheat flour (gehun ka atta) for rolling
oil for frying
2- For The Filling-
2 cups boiled moong (whole green gram) , matki (moath beans) and kala chana (brown chick peas)
500 gms boiled potatoes
salt to taste
3- Other Ingredients
500 gms curds (dahi)
khajur imli ki chutneyas per taste
Green Chutney as required
1 tsp chilli powder
1 tsp roasted cumin seeds (jeera) powder
1/4 cup sev
Chaat Masala Powder – 1 tsp
Coriander Leaves – few, chopped
Green Chillies – little, finely chopped
Onions – 2 to 3 tblsp or as required, finely chopped
Boondi as required
Method
1-For the kachori
Combine all the ingredients in a bowl and using water knead a semi soft dough.
1. Divide the dough into equal portions and roll out into little thick big puris using little flour for rolling.
2. Heat the oil in a kadhai at a high flame and then reduce the flame to slow and deep-fry the puris till crispy and brown in colour.
3. Remove on absorbent paper and keep aside.
For the Filling
1. Combine the moong, matki, chana, potato and salt in a bowl and mix well.
2. Divide the mixture into equal portion and keep aside.
2-How to Proceed
1. Make a depletion in the center of the Kachori and put one portion of the filling.
2. Top it with little curd, chutney and chaat masala powder, , green chillies, onions, boondi
3. Sprinkle some sev , Anar Daana & Coriander Leaves on top and serve hot.
3-For Chutney ingredients & Yogurt
Sweet Chutney - 2 tbsp, or adjust per your taste, Tamarind and Date is what I used.
Green Chutney - 2 tbsp, or adjust per your taste, I used a blend of mint, coriander leaves, green chilies, lemon and salt for this.
Yogurt - 1/4 cup, just nicely beaten with little salt, sugar, cumin powder and Red chili powder.
