Goyza


Ingredients
2.5 lbs of ground pork
1 head of cabbage
2 bunches of green onions
2 large carrots
4 eggs
3 tablespoons of corn starch
1 tablespoon of crushed garlic
3 tablespoons of soy sauce (I use Braggs amino acid now instead of soy sauce)
salt and pepper.
(2 tablespoons of crushed red pepper if you enjoy spicy food)
3 packages of won-ton wrappers. Most grocery stores have them in the produce section. Square ones work best.
olive oil
1 large can or box of chicken broth (I usually make my own chicken stock and freeze it)

Cut the cabbage, carrots and green onions in thin slices, like cole slaw. Mix (by hand) in the ground pork, corn starch, garlic, soy sauce, salt and pepper (hot peppers flakes optional) and 2 raw eggs. Cover and put in fridge for several hours allowing the flavors to blend together.
Beat two eggs in a small bowl, use to seal the dumplings.
Scoop out one spoon of filling onto a won-ton wrapper, using your finger spread a small amount of the beaten egg onto the edge of the wrapper, then fold cross-wise to make a triangle and press closed.
Stack the dumplings carefully until you have enough to start frying. Fry lightly in oil until brown, turn and fry other side. Remove from the oil and put in a second huge, deep frying pan. When the second pan is full, turn on med. high heat, add half the chicken broth. Cover the second pan with a lid and let simmer for 5-7 minutes. (Keep frying the remaining dumplings while the first batch steams). Remove from the pan, put on a serving dish and put all the second batch of fried dumplings into the steaming pan . Use the remaining chicken stock to steam these while you and the kids eagerly devour the first batch!...serve with sweet chili sauce, hot mustard or soy sauce for dipping..
