INGREDIENTS
3 - 4 tbsp lukewarm milk
2 tsp dry yeast
2 ¾ tbsp sugar
Salt a pinch
1 apricot
1 orange
2 tbsp desi ghee
2 tsp finely sliced almonds
1 tsp raisins
1 tsp finely chopped garlic
2 tsp cinnamon powder
2 tsp finely chopped rosemary
¼ tsp dry ginger powder
3 tbsp canned cherries
For Dough
1 ½ cup all purpose flour
Salt a pinch
Baking powder a pinch
½ tsp cardamom powder
½ tsp dry ginger powder
1 tsp finely chopped rosemary
½ cup milk
For Dusting
All purpose flour
For Greasing
Butter
Finely chopped rosemary as required
Dry ginger powder as required
Cardamom powder as required
Icing sugar as required
Roasted dry fruits as required
For Dip
2 - 3 tbsp honey
1 tbsp lemon juice
¼ tsp/a pinch cinnamon powder
¼ tsp/a pinch dry ginger powder
1 tsp powdered sugar
½ tsp finely chopped garlic
½ tsp cardamom powder
¼ ginger
2 tsp cherry syrup
For Garnish
Rosemary
PROCESS
Mix milk, yeast, sugar and salt in a bowl to prepare a mixture and keep it to rest for 4-5 mins.
Meanwhile, finely chop the apricot and oranges.
Now heat desi ghee in a pan and saute almonds, raisins, garlic, cinnamon powder, salt, cardamom powder, rosemary, dry ginger powder and chopped fruits in it.
Next, add cherry and sugar in the pan to cook for 4-5 mins.
After cooked, again add rosemary in it.
Now mix all purpose flour, salt, baking powder, cardamom powder, dry ginger powder, prepared yeast mixture, rosemary and milk in another bowl to make a dough.
Keep the prepared dough on rest for 2 hrs.
After this, roll out the dough and grease it with butter, fold it and again grease it with butter.
Repeat the process for more 2-3 times.
Put butter on the rolled out dough and sprinkle rosemary, dry ginger powder, cardamom powder, icing sugar, and roasted dry fruits, apply butter again on it and roll it.
Now cut the roll and keep it on rest for 15 min on room temperature.
After this, keep the roll for 15-18 mins on 210°C in oven to bake.
Now mix honey, lemon juice, cinnamon powder, dry ginger powder, powdered sugar, garlic, cardamom powder, chopped ginger and cherry syrup in another bowl to prepare a dip.
Garnish the prepared rolls with rosemary and serve them with the prepared dip.
Your Rosemary and Ginger Fruit Roll is ready.
