Middle Eastern Falafel Recipe



gredients
1 cup Chickpeas or Garbanzo Beans.
Oil for frying
1 large Onion, chopped
3 tablespoons of fresh Parsley, chopped
2 cloves of Garlic, chopped
1 teaspoon Cumin
1 teaspoon Coriander
2 tablespoons Flour
Salt to taste
Pepper to taste

Preparation
place one cup of canned chickpeas in pan with fresh water, and bring to a boil. Boil for five minutes more, then let simmer on low for about an hour.
Drain water and allow to cool chickpeas.
Make a thick paste of Chickpeas, Garlic, Onion, Coriander, Cumin, Salt, Pepper and flour in a food processor.
Now make small Balls of this mixture.
Fry in oil until golden brown.
