SHAHI TUKRAY



Ingredients
3 cups Full Fat Milk
1 cup sweet condensed milk
2 tbsp sugar
2 tbsp khoya
4-5 saffron strands
1 tsp cardamom powder
6-8 slices of bread
Oil for shallow frying
1 tbsp chopped cashews
1 tbsp chopped pistachio
1 tbsp chopped almonds
1/2 tsp kewra essence
1/2 tsp yellow food color

Method
In a large pan mix together milk, condensed milk, sugar, saffron, cardamom powder, yellow color, khoya and half portion of nuts and bring it to boil. Reduce heat and let it simmer for about 15-20 minutes. Turn off flame , add kewra essence and wait for milk to get slightly warm on room temperature.
Remove sides of bread slices and cut each slice into 2 triangles or 4 equal squares.
Shallow fry all bread pieces till golden brown and crispy and arrange them in a Pyrex dish.
Pour prepared milk mixture on them and garnish with remaining cashews, pistachios and almonds.
