Spicy Rice with Peri Peri Chicken

Ingredient
1-Chicken 1 full cut. In for peices
2-Lemon 4 – 5
3-Salt 1 tsp
4-Soya sauce 2 tbsp
5-Black pepper 1 tsp (crushed)
6-Paprika powder 2 tbsp
7-Garlic 2 tbsp
8-Worcestershire sauce 2 tbsp
9-Peri peri sauce 4 tbsp
10-Oil ¼ cup
11-Meat tenderizer 1 tsp
For Peri Peri Sauce:
1-Kashmiri red chili 6
2-Red chili 12 – 15 (whole)
3-Red chili 2 tbsp (crushed)
4-Oil ¼ cup
5-White vinegar ½ cup
6-Onion 1
7-Tatri ½ tsp
8-Garlic clove 4
9-Coriander 1 tsp (crushed)
10-Salt 1 tsp
For Spicy Rice:
1-Rice 1/2 kg (soaked)
2-Oil ¼ cup
3-Onion 1 cup (omelet style chopped)
4-Garlic 1 tbsp (crushed)
5-Salt to taste
6-White pepper 1 tsp (powder)
7-Capsicum 1 cup (cut into small cubes)
8-Tomato 1 cup (cut into small cubes)
9-Peri peri sauce 4 tbsp
Method
1-Marinate chicken with lemon juice, salt, soya sauce, black pepper, paprika powder, garlic, Worcestershire sauce, peri peri sauce, oil and meat tenderizer. Keep aside for 3 to 4 hours.
2-Cook chicken pieces in pre-heated oven for 25 to 30 minutes on 200°C.
3-When it becomes tender and water dries up then take out chicken in grill pan and cook for 5 to 7 minutes.
4-When chicken color turns golden brown that it’s mean chicken is ready.
For Peri Peri Sauce:
5-Mix all ingredients in blender and blend well.
6-Peri peri sauce is ready.
For Spicy Rice:
7-Boil rice in a wok.Then heat oil in a pan and fry onion and garlic.Add boiled rice in it.
8-Now add salt and white pepper. Mix well.
9-Finally add capsicum, tomatoes and peri peri sauce toss the mixture.
10-Take out in platter and serve with grilled chicken.
