Ingredients
2 Cups All purpose flour
1 tsp Baking soda
100gms Dates, chopped
1 cup Boiling water (250ml)
1/2 cup Sugar
5 tbsp Butter
1 tbsp Flaxseed meal dissolved in 1/4 cup of hot water(???? )
1/2 tsp Salt
1/2 cup chopped Nuts(i used cashew nuts & pistachios)
1 tsp Vanilla extract
Preparation
Pit dates and roughly chop them. Add these along with baking soda to a heat proof bowl. Pour in boiling water and leave it to cool.
In a bowl, sift flour and salt. Set aside. Take hot water and mix flaxseed meal. Set aside. Cream butter and sugar together.
To this add flaxseed meal-water mixture and combine well. Now fold in half of flour mix and combine. Add in dates mixture and gently fold to combine all.
Add remaining flour mix and gently mix by adding vanilla extract and chopped nuts. Preheat your oven at 180C. Take a baking pan, grease it with butter or line a parchment paper.
To bake this bread I used two small loaf pans.
Transfer the contents into baking pan and bake for 50 minutes or until the tester comes out clean when inserted in the center of the bread.
Let it cool completely on a wire-rack. Slice them and serve it along a hot of Coffee/Tea/Milk.
