Chanay ki Daal aur Karelay



Ingredients
Bitter Gourd ½ kg
Yellow Lentils ½ cup
Whole Red Chilies 8
Garlic Cloves 6
Ginger Garlic Paste 1 tbsp
Salt to taste
Tamarind Pulp ½ cup
Cumin (roasted & ground) 1 tsp
Oil (for frying) as required
Gram Flour as required
Egg 1
Fennel Seeds 1 tsp
Onion Seeds 1 tsp
To Remove Bitterness:
Turmeric 1 tsp
Salt to taste
Jaggery 1 small piece
Tamarind Pulp 2 tbsp
Method
Peel bitter gourd, slit from the centre and marinate it with the given ingredients for half an hour.
Now wash it thoroughly
Cook yellow lentils with salt, red chilies, garlic, ginger garlic paste, all spice and 2 cups water
When water dries off, remove and grind the lentil
Now beat gramflour, tamarind pulp and egg together.
Now fill ready lentil mixture in bitter gourd and tie them with thread.
Roll bitter gourd in gram flour mixture and deep fry till it turns golden brown.
