Vegetable Biryani



Ingredients
2 cups basmati rice (soaked )
1 cup cauliflower
2 carrot (diced)
1/4 cup chopped beans
8 to 9 button mushroom sliced (optional)
1/4 cup green pepper chopped (optional)
1/3 cup fresh or frozen peas.
1 large onion sliced
1 tsp ginger paste
1 tsp garlic paste
for cooking rice:
2 green cardamoms
2 black cardamoms
2 cloves
1 cinnamon stick
1 bay leaf
6 cups water
1/2 tsp salt or add as per taste
for vegetable :
3 tbsp oil
1 tsp cumin seeds
1 bay leaf
3 green cardamoms
3 cloves
1 black cardamon
1 inch cinnamon
1 cup whisked yogurt
1/2 tsp turmeric powder
1 tsp red chilli flakes
for assembling and layering
1/3 cup chopped coriander leaves
1/3 cup mint leaves, chopped
4 to 5 tbsp milk
1/4 tsp saffron
2 tsp kewra water or rose water
Method
soak the rice in water for 30 minutes.
after 30 minutes drain the rice and keep aside.
when the rice is soaking prep all the veggies and other ingredients. keep aside.
cooking rice:
take a deep bottomed pan. add water and heat the water on a high flame.
when the water becomes hot, add all the spices and salt bring the water to a boil. then add the rice.
continue to cook the rice.
the rice has to be 75% cooked.
drain the rice in a colander and keep aside.
preparing vegetables :
in a pan, heat 3 tbsp oil now add the onions. stir and sauté them when the onions cooked .
Now add ginger, garlic paste and all masalas take yogurt in a bowl. beat with a spoon or whisk till it become smooth. stir and mix well.
next add the chopped veggies. sauté for a minute or two.
stir again.cook till the veggies are done. don’t over cook the veggies.
warm 4 to 5 tbsp milk add ¼ tsp of saffron stir and keep aside.
assembling and layering:
now in a thick bottomed pan,layer half of the rice.then layer half of vegetables sprinkle half of the chopped coriander, mint leaves and saffron milk.
layer the remainder of the rice. Then remaining of vegetables sprinkle the remaining coriander, mint leaves, saffron milk on the top. sprinkle 2 tsp edof rose water or kewra water. you can make 2 layers or 4 layers but do remember that rice should be the last layer.
now seal and secure the pot with aluminium foil. then cover with a lid.
preheat the oven to 180 degree celsius and then bake the biryani in the oven for 20-25 minutes.decorate your biryani with boiled eggs.
serve the delicious veggies biryani with your choice of raita, onion salad,mango pickle . Enjoy!!!
