PAANCH PURAN POTATOES



INGREDIENTS
2 Large Red potatoes
2 heaped tablespoon Panch Puran
1 tablespoon Mango powder
1 tablespoon tomato puree
Salt to taste
Oil
Handful of chopped coriander leaves
METHOD
1. Peel, wash and cut potatoes into small pieces
2. Soak in cold water for 15-20minutes
3. Heat oil in a non stick wide based pan
4. Add potatoes and cook for 5-7mnutes
5. Lower the heat
6. Add salt and next add tomato puree and mix well
7. Add panch puran and mango powder and cook till potatoes are tender – probably another 5-7minutes
8. Lastly add coriander and mix well
9. Remove to a serving dish & serve immediately
10. Goes best with chappati or Naan
