Ouzi Rice



1- Ingredients for the Meat
2 kg lamb/mutton-cut into big chunks
1 tbs cumin powder
1 tbs coriander powder
1 tbs cinnamon powder
1 tbs black pepper powder
1 tbs salt
1 tsp turmeric powder
1 tsp paprika powder
2 large size onion-sliced
5 pieces garlic cloves
2 large size tomatoes cut into 4pieces
2- Ingredients for the rice
5-6 cups extra long grain rice/basmati rice/Egyptian rice(I used extra long grain rice)
1/2 cup oil
2 large sized onion-Finely diced/chopped
5 pieces of minced garlic
2 cups mixed vegetable(carrots+peas-less/more)
3- For the covering:
1 packet Fillo pastry-store bought
1/4 cup oil
1/4 cup clarified butter/pure desi ghee
1 tbs cinnamon powder
Method
1- To make lamb/mutton
In a bowl mix together the spices(salt, paprika, turmeric, cinnamon, cumin & coriander) Put lamb/mutton pieces In a large dish/plate sprinkle half amount of pieces(we mixed earlier) over the lamb/mutton and mix well.
In a large cooking pot add in oil and let it warm on medium heat, now add in lamb/mutton pieces and fry till golden brown, now add in onion, garlic, tomatoes and enough warm water cover the pot and let the meat cooked all the way through.
Once done set a side to use later.
For the rice
Soak the rice for half an hour.
In a large cooking pot add in oil let it warm in medium heat, now add in onion+garlic and fry until soft, add in vegetables & remaining spices(we used earlier to add in lamb) cook till get tender, now add in enough water(according to cook your rice-I used 6cups of water to cook my rice) and let it boil once water boils add in rice, cover and let the rice done.
3- Assembling the Ouzi rice
In a small bowl mix together the oil+pure ghee/clarified butter and set a side.
Take large stainless steel bowl(as shown in pic) take one sheet of filo pastry and brush with oil+pure ghee/clarified butter and gently place this sheet in pan(as shown in pic) keep layering until used all filo pastry sheets, now sprinkle 1 tbs cinnamon powder over the filo sheets, now place good amount of cooked rice over the filo pastry(we layered in the bottom of the bowl) then layer the cooked lamb/mutton over, continue the process(as shown in pic) until ends, now take filo pastry sheets from the sides of the bowl and cover the rice with filo pastry(as shown in pic) now brush with oil+ghee mixture and place one large size plate over the filo pastry.
3- For the baking
Preheat your oven on 175/180 C, and keep this bowl in the oven fir about 40-45minutes/until filo pastry gets golden brown color and crispy.
Once baked take it out from the oven and let it sit for 5minutes then serve hot.
