Date and Banana Bread



Ingredients
1-1/4 cup vegetable oil
2-1/2 cup sugar
3-1 egg
4-1 1/2 cups all-purpose flour
5-2 teaspoons baking powder
6-1/2 teaspoon baking soda
7-1/2 teaspoon salt
8-1 1/2 cups mashed ripe bananas (3 to 4 bananas)
9-2 tablespoons water
10-1 teaspoon vanilla extract
11-1 cup chopped pitted dates
12-1/2 cup chopped nuts
Method
1-Preheat oven to 350 degrees.
2-In a large bowl, beat together the oil and sugar.
3-Add the egg and mix well.
4-In a medium sized bowl, combine the flour, baking powder, baking soda and salt.
5-In another bowl, combine the bananas, water and vanilla extract.
6-Add banana mixture to the oil and sugar mixture alternately with the flour mixture, combining well after each addition.
7-Stir in dates and nuts (if desired).
8-Turn mixture into a greased and floured 9" x 5" loaf pan.
9-Bake for 50-55 minutes or until a wooden toothpick inserted in the center of the loaf comes out clean.
10-Cool for 10 minutes then remove from pan and let cool on wire rack before slicing.
