Recipe Ingredients
3 cups white kidney beans boiled
1 red pepper (diced)
1 green pepper (diced)
1 tsp red pepper flakes
to taste Salt
2 garlic clove (minced)
3 Tomatoes (diced)
to taste Pepper
1 tbsp lemon Juice
2 tbsps olive oil
pinch lemon zest
4 tbsps fresh coriander (roughly chopped)
Recipe Method
In a bowl put all vegetables, cooked beans, salt, pepper, red pepper, garlic, oil and lemon.
Refrigerate about 20mins.
Bring to room temperature before serving
Before serving, add chopped coriander and serve
