Ingredients:
Semolina (heaped) 1 cup
Water 1 cup
Yogurt 1/2 cup
Oil 2 tbsp
Fruit salt 2 tsp
Gram flour 1 tbsp
Turmeric powder 1/2 tsp
Sugar 1 tsp
Salt to taste
To Temper:
Mustard seeds 1 tsp
Curry leaves few
Green chillies (chopped) 3-4
Oil 1 tbsp
For Topping:
Water 1/4 cup
Sugar 1/4 tsp
Salt 1/4 tsp
Lemon juice of 1/2 lemon
Coriander leaves chopped as required
Desiccated coconut 2 tbsp
Method:
Mix all ingredients except fruit salt together into a smooth paste, set aside for a while. Just before steaming, add fruit salt. Immediately pour into greased tray or thali and steam for 10 min on high flame, or until done. Heat oil and give a temper of mustard seeds, curry leaves and green chillies. In a pan, mix water, sugar, salt, and a good squeeze of lemon. Heat through. Then pour this water on the steamed dhokla let it rest for 20 minutes. Cut into square pieces, sprinkle with chopped coriander, desiccated coconut and serve.
