Recipe Ingredients
350 g strong bread flour
1/2 tsp salt
7 g yeast
250 ml warm water
1 tsp runny honey
1 egg, beaten
Recipe Method
Put your flour, yeast and salt in a mixing bowl. Dissolve your honey into the warm water and pour over your dry ingredients. It should start to bubble slightly
Incorporate them together with a fork. You will get quite a sticky dough which is a bit harder to work with, but which will give you a softer, fluffier bread.
Flour your hands and work top and turn out the dough onto it. Knead the bread by pushing down with palm of you hand and folding it over, for about five minutes.
It should be nice and springy when it is ready. Put the dough in a bowl and cover it with cling film. Leave in a warm place until it had doubled in size, this should take about an hour.
Knock it back by kneading it for about a minute.
Roll it into a sausage and cut it into 8 pieces. Take each piece and flatten it out, then pull the edges into the palm of your hand and turn it over to make a neat roll.
To get your roll golden and shinny, brush the top of each roll with some egg. Finally sprinkle over some seeds.
Bake at 180 degrees Celsius for 10-15 minutes.
Test them by tapping the bottom of your biggest roll, it should sound hollow when it is ready.
If you prefer a soft roll, cover them with a cloth as soon as they come out of the oven.
