Dalyan Kofte



Recipe Ingredients
1/2 kg Minced beef
1 small Onion, chopped
1 tsp Garlic, chopped
1 tsp Parsley, chopped
1 tsp Cumin powder
1/2 tsp Red chilli powder
2 tbsps Bread crumbs
1 Egg
1 medium Tomato

Recipe Method
Set the oven to 120 F.
Put the minced meat in a deep steel bowl and add all the other ingredients in it. Mix well.
Place a wet muslin cloth on the table and put the meat on it. Roll it and leave it for a 15-20 minutes.
Remove the beef roulade and place it in a roasting pan.
Place the pan in the oven and bake for 20 minutes at a temperature of 160 F.
Once the beef roulade is cooked (it turns into a brown color) take the meat out on a dish keeping the shape the same. Cut it into slices and arrange around the dish.
Decorate with chopped tomatoes on the top.

Arabic Shish Taouk



Recipe Ingredients
Chicken boneless (cut into cubes) ½ kg
Garlic paste 1 tsp heaped
White pepper ½ tsp
Mustard powder 1 tsp
Mayonnaise 3 tbsp
Yogurt 3 tbsp
Tahini sauce 2 tbsp
Lemon juice 2 tbsp
Salt 1 tsp
Oregano leaves 1 tsp
Onion (cut in cubes) 2
Capsicum (cut in cubes) 2

Recipe Method
Marinate chicken with heaped garlic, white pepper, mustard powder, mayonnaise,yogurt, thyme, lemon juice, salt and oregano leaves for 2 hours in the fridge.
Put chicken pieces on skewers alternating with vegetable cubes.
Grill in oil.
Now put it in a pan then put a burning coal on a foil in the pan; drop some oil on it and cover.
Serve immediately.

Arabic delight Tulumba


Ingredients
Water 2 cups
Butter 2tbsp heaped
Milk powder 4tbsp heaped
Flour 2/1/2 cups
Eggs 4 to 5
Vanilla extract 1 teaspoon
Oil for frying
For sugar syrup
Sugar 2 cups
Water 1 cup
Lemon juice 1 lemon squeezed
Make sugar syrup of two tar, let it cool
Method
Take non stick pan, add water, when it's hot, add butter, milk powder, mix well, start folding flour little little, to avoid lumps, it needs power, mix nicely, first it will b crumbly, as shown in the pic, as we will mix, it will b smoother, off the stove.
Now let it cool completely.
Start adding one egg at a time, mix very well with the help of wooden spoon into smooth paste,
Fill thus paste in piping bag, heat the oil in non stick pan, when it's medium hot, start dropping tulumba in medium hot oil, it needs patiance, it will b doubled in size, now make the flame high, it will b golden crispy in nature n juicy from inside.
Remove from oil, put it in sugar syrup , let it there for 1 minute, fold in sugar syrup,by turning occasionally.
arrange in serving dish, garnish with blanched chopped pistachios.
Just enjoyyyyyyyyyyyyy mouth melting tulumba, many add suji, starch, I didn't add, it's delicious in eating.

ARABIAN CHICKEN RICE



Ingrеdiеntѕ
Chicken Lеgѕ 2
Chicken Breast 2
Riсе 2 сuрѕ
Clаrifiеd butter 1 сuр
Yоgurt ½ cup
Gingеr garlic paste 1 tbѕр
Grееn сhiliеѕ 4
Cruѕhеd cardamom 6

White vinеgаr 2 tbsp
Method
Wаѕh 2 сuрѕ оf riсе. Take a раn, аdd in 1 сuр clarified buttеr аnd аdd in 2 chopped onions. Gоldеn brоwn it. Tаkе оut thе оniоn and аdd in сhiсkеn in thе ѕаmе оil. Cооk it and drу it. Add in 2 tbѕр white vinеgаr, 6 сruѕhеd саrdаmоm, ½ сuр уоgurt and 1 tbѕр gingеr gаrliс paste. Cook it. Add in сhорреd аlmоndѕ and 1 сuр raisins. Cооk it. Add in 2-3 cups оf water and riсе. Whеn the wаtеr соmеѕ tо boi;, ѕimmеr it. Riсе it rеаdу. Dish it оut. Gаrniѕh it with friеd onion and ѕеrvе.

Homemade Crunch Wrap Supremes



Ingredients
- 12 "burrito size" flour tortillas
- 6 corn tortillas
- 1 lb ground beef
- 1 pkg taco seasoning of your choice
- 1 jar of taco cheese (found in the same aisle as the mexican foods/or chips)
- 1 container of sour cream
- 3-4 tomatos (depending on size)
- 1 bag/head of iceberg lettuce
**please note these quantities and measurements for filling crunch wraps are estimates, you should adjust filling amounts to suite your own tastes
Directions
Preheat oven to 400 degrees F. Use one corn tortilla to cut a circle of the same size out of 6 of the flour tortillas. Put the 6 cut out flour tortillas aside. (Reserve outside of the 6 flour tortillas for making homemade tortilla chips if desired.) Place 6 corn tortillas on a baking sheet (spread out) and bake until crispy (mine took about 7 minutes - I would recommend starting with 5 minutes and then checking every 2-3 minutes until they are done to your liking). Put oven to "warm".
Cook the ground with the taco seasoning as directed on packet and set aside. Chop tomatoes and lettuce. Have a medium size skillet ready on the stove and have a counter surface with all of your ingredients ready to assemble.
Microwave a full size flour tortilla for about 10 seconds (or until warm) and lay onto counter surface. Place some (I started with 3-4 TBSP and adjusted from there) ground beef in the center of the tortilla and top with some of the cheese (I did about 2-3 TBSP). Lay a corn tortilla on top and press down slightly. Top corn tortilla with some sour cream (I did about 1-2 TBSP) and some chopped lettuce and tomato. Top entire thing with one of the cut out flour tortillas that are the same size as the corn tortilla. Fold each side of the larger tortilla up until all the filling is covered, pressing down to get a somewhat seal.
Spray the cooking pan lightly with cooking spray and place the crunch wrap into it, seam side down. Cook on low-medium, pushing down lightly with a spatula, for 2-3 minutes on each side. Place on serving pan in oven to keep warm until ready to eat. Continue with other ingredients until you have made all the crunch wraps.
It may seem like lengthy instructions but once you get into a swing of it, these are really easy to assemble. Although this filling combination is a replica of the one you would get at Taco Bell, feel free to tweak fillings as you wish and adjust as you go. Enjoy!

Arabian Mince (Keema) Rings



Ingredients
Minced lamb 250 gms
Beef minced 250 gms
Spring onion 2 tbsp (chopped)
Eggs 2 lightly beaten
Salt to taste
Bread slice 2 slices
All spice 1/2 tsp (ground)
Dry dates and dry apricot 2 each soak in Sam water till soften
Pine nuts 2 tbsp (crushed)
Pistachio 2 tbsp (crushed)
Saffron powder 1/4 tsp
Mint chopped 1/2 tsp
Chopped green chilies 2 tsp
Oil 1/2 cup
Method
Soften the bread slices, chop dry dates and apricot.
Mix all the ingredients together refrigerate mixture for 30 minutes.
Make ring shape rissoles.
Heat half the oil fry three ring rissoles at a time.
Fry the first side for 5 minutes at medium heat then change the side and fry for another 5 minutes.
Fry the remaining rings in the same way.
Serve with rice and yogurt.

Arabic Paratha



Ingredients
Filling.
1-Mince(fried as usual with spIces)
2-Tomatoes finely chopped. 2-3
3-Coriander leaves chopped. 2 tbsp
4-Mint leaves chopped. 1 tbsp
5-Green Chillies chopped. 2
6-Black pepper . 1/2 tsp
7-Eggs. 1-2
8-Onions finely chopped. 1
For Dough.
1-Flour 21/2 cups or 400 grams.
2-Milk 3/4 cup.
3-Salt to taste.
4-Ghee .
Method
1-Knead flour, salt and milk and keep for 1/2 hour. Make medium pairas from the dough.
2-Roll out into medium sized square parathas. In the center of each paratha put fried qeema, tomatoes, coriander & mint leaves, green chillies and onion .
3-Pour 1 beaten egg onto this filling in the paratha, sprinkle black pepper on it and fold the paratha from both sides to form a rectangle shape.
3-Slightly fold the shorter edges too. It should be sealed completely.
4-Shallow fry on medium flame. When it swells up, that shows the egg is cooked from inside.
5-It should be golden on both sides.
6-Serve hot with spicy chutney.

Arabic Kafta Kabab Recipe


Recipe Ingredients

2lbs/ 1kg approx. lean ground lamb or beef (or a mix of them)
1 small onion, finely chopped
1/4 cup finely chopped parsley
1/4 cup finely chopped mint leaves (optional)
3 cloves garlic - peeled & crushed
1 green chilli - finely chopped
1 beaten egg
1 tbsp milk
1-2 tbsp bread crumbs
1 tsp white pepper
1 tsp cumin powder
1/2 tsp coriander powder
Kosher salt to taste
lemon wedges, parsley leaves, green olives, hummus, pickles & khubz/ pita bread on the side
2 tbsp olive oil

Recipe Method

Mix all the ingredients together other than the bread-crumbs, milk, eggs, oil & sides/garnish items.
Leave to marinate for 20 min (30 is better).
In a separate bowl, mix the egg, bread-crumbs & milk into a coarse mix - do not over mix & mash.
Now add the egg-crumb mixture into the meat mixture, evenly yet not over-mixed!
This gives a semi-crunchy texture to the kebabs.
Shape into 1 inch thick rolls & press skewers through them lengthwise, gently pressing the meat onto the metal and barbeque until meat is cooked smearing with oil from time to time. OR
Press the roll flat (3-4 cm thick) onto a baking tray or grill pan & grill on medium heat (high heat will dry them up) for 10-15 minutes on both side, smearing with olive oil from time to time.
Place kebabs onto a bed of salad (chopped lettuce, plain or roasted tomatoes & onion rings, pickles, olives, etc.)
Spoon some hummus on the side along with some tempting lemon & khubz wedges.
Serve with some Laban (Ayran) as a side-drink.


Umm Ali



Ingredients
1 packet puff pastry/plain croissant
( I used puff pastry, store bought)
1 L whole milk
1 1/2 cup whipping cream
1 cup crushed almonds+pistachio+walnut-more/less
1 tin of condensed milk/sugar to taste(more or less)
3 tbsp raisins
3 tbsp shredded coconut(sweet/unsweetened )

Directions
1- Preheat the oven 190 degrees.
Then place milk and 1 1/2 cup of cream in a pan over medium heat add condensed milk and let boil for 3 minutes.
2- Grease the baking tray with butter and place a layer of puff pastry.
3- Sprinkle the shredded coconut, nuts and raisins evenly over the puff pastry.
4- Slowly pour the milk over the puff pastry and add the rest of the cream on the surface n sprinkle some crushed nuts on top then place into the oven for about 8-10 minutes then broil for 1-2 minutes to give it a golden color on top(keep an eye on it while broiling, so it won't burn)
5- Once done take it out of the oven, let it set for cool slightly.
Serve right away/chilled(I prefer chilled)

ARABIC KABSA



Ingredients
Rice 750 g
Dried lemon 1
Salt 2 tsp
Black pepper ½ tsp
Green cardamom grinded ½ tsp
Chicken 1 kg with skin
Green chilies 8
Tomatoes 2
Cumin seeds 1 tsp
Turmeric ¼ tsp
Crushed red pepper 1 tsp
Onion 1 ½ cup chopped
Tomato paste 2 tbsp
Ghee ¼ cup
Bay leaf 2
Black pepper 12
Cloves 10
Cinnamon 4 sticks
Method
Heat ghee in a pan add whole spices with chopped onion fry until soft add chicken with skin fry till light golden add chopped tomatoes seeds removed fry, add green chilies, dried lemon all the above seasonings, 8 cups water, cover and cook for at least 40 minutes, remove chicken add 1 tbsp salt to the leftover stock add green cardamom powder with soaked rice, cover and cook till water dries, leave it on dum, grill the chicken in oven for 15 minutes till crisp and golden on 200 degrees add lemon juice, remove rice in a platter, serve chicken over rice, serve with sauce.
Ingredients for sauce (dakous):
Oil ¼ cup
Garlic paste 1 tsp
Tomato paste 2 tbsp
Water ½ cup
Green cardamom ½ tsp
Salt ¾ tsp
Curry powder ½ tsp heaped
Dried lemon 1
Method
Heat oil add garlic paste, stir for 1 minute add tomato paste with half cup water, cook for 10 minutes add seasonings, dry lemon, cook till thick, serve with kabsa

Moroccan Carrot Salad Recipe


Recipe Ingredients

1 tsp cumin seeds
2 tsp coriander seeds
1 tbsp vegetable oil
1 onion, finely chopped
400g frozen carrots, thawed
Juice of 1 orange
2 tsp honey
1 tbsp olive oil
2 tbsp chopped, fresh coriander, plus sprigs to garnish

Recipe Method

Put the cumin and coriander in a pan and dry-fry on a medium heat for 2 minutes. Tip out onto a plate and set aside.
Heat the vegetable oil in the pan, and cook the onion until soft. Add the carrots and orange juice and cook for 3 to 4 minutes, stirring or tossing occasionally.

Tip:

into a bowl and gently stir in the spices, honey and olive oil. Season and leave to cool slightly, then stir in the coriander. Serve at room temperature.


Arabian Qehwa Recipe


Recipe Ingredients

Water 3 cups
Sugar as required
Cardamom powder ½ tsp
Roasted coffee beans powder 2 tbsp

Recipe Method

Take 3 cups of water in a pan with roasted coffee bean powder and cardamom powder and cook for 5 minutes on medium flame.
When the color starts to change, take off flame.
Pour in serving cups and serve hot with sugar.


Baklava Recipe


Recipe Ingredients

200 gm Puff pastry
200 gm Walnuts
200 ml Sugar or golden syrup
1 Egg

Recipe Method

Add 100 ml sugar syrup or golden syrup to 200 grams crushed walnuts and mix. Roll 200 grams puff pastry with a rolling pin. Grease a 1-inch deep baking pan with butter and place half 1/2 pastry dough in the pan. Top with sugar glazed walnuts and then place remaining puff pastry in the pan. Brush with a beaten egg and bake in a preheated oven at 200 f for 12 to 15 minutes. When the dough turns golden brown, take out of oven and top with golden syrup. Cut baked Baklava in the desired shape and serve.


Arabian Laham Mandi (Mutton With Rice) Recipe


Recipe Ingredients

Mutton 1 kg
Rice 2 cup (soaked for half an hour)
Carrot 2 (grated)
Capsicum 2 (sliced)
Olive oil 4 tbsp
Almond ½ cup
Chicken stock 4 cup
Salt as required
Green cardamom 4
Clove 4
Black pepper 10
Nutmeg 1 pinch
Bay leaf 2
Ginger powder 1 tsp
Lemon 4 (sliced)
Water 1 cup
Recipe Method
For mandi spice:

Add nutmeg, bay leaves, ginger powder, black pepper and clove in a grinder and grind well.
Now put mandi spices in a bowl and add lemon, 2 tablespoon oil, 1 cup water and salt.
Apply this mixture to the mutton and leave to marinate for a few hours.
Then tightly pack with aluminum foil.
Now bake in oven for 40 minutes.
Take out from oven and cook until water dries.
Inflame a piece of coal and place it in the middle of mutton pan.
Now drizzle a little oil on coal and immediately cover it tightly.
Heat the remaining oil in a pan, add chicken stock and boil for a while.
Then add 1 tsp mandi spice.
Now add salt and rice and cook till very little water is left.
Then mix capsicum and carrot.
Cover tightly and steam on very low heat for 10 - 15 minutes.
When rice is ready, take it out in platter and put prepared mutton on top.
Garnish with almonds and serve hot.

Arabic Stiffed Paratha Recipe


Recipe Ingredients

All purpose flour 2 cups
Salt ½ tsp
Milk as required (for knead)
For Filling:
Mince 300 gm
Ginger and garlic paste ½ tsp
Salt ½ tsp
Chinese salt ½ tsp
Black pepper ½ tsp
Fresh coriander ½ bunch (crushed)
Green chilies 2 (chopped)
Spring onion 1 (finely chopped)
Eggs 2
Oil for frying
For Egg Filling
Black pepper ½ tsp
Salt ¼ tsp
Oil 2 tbsp

Recipe Method

For Dough:
Mix together flour, salt and knead to make dough with milk.
For Filling:
In a pan, cook mince with ginger garlic paste, salt and water.
Cook till water evaporates and mince is tender.
Now add Chinese salt, black pepper, coriander, chopped spring onion and chopped green chilies.
Mix well and turn the flame off.
Separately beat 2 eggs with black pepper and salt.
Now heat oil and fry egg mixture in it.
For Paratha:
Make balls of dough.
Roll and spread mince filling on it.
Now spread egg filling and cover it from all sides.
Again roll and fry on Tawa.
Serve hot with raita.


Arabic Shish Taouk Recipe


Recipe Ingredients

Tukish Semolina Cake Recipe


Recipe Ingredients

Vegetable oil 1 glass
Yogurt 1 glass
Semolina 2 glass
Sugar 1/2 glass
Vanilla sugar 1 pack
Backing powder 1 tsp
Eggs 3
Cherries 1 tin or nuts (optional)
For Sugar Syrup:
Sugar 2, 1/2 glass
Water 2, 1/2 glass
Lemon juice of 1
*Use the same glass for the entire recipe*

Recipe Method

For Cake:
Beat together sugar and eggs till creamy.
Mix in yogurt and oil.
Gradually add rest of the ingredients and mix thoroughly.
Grease a cake pan with some oil and pour the cake batter in it.
Bake for 20 - 30 min at 190 C. (check after 20 minutes if the cake is ready)
For Sugar Syrup:
Cook together sugar, lemon juice and water til done.
Pour the sugar syrup on cake and let it absorb.
Garnish with cherries or nuts, cut in squares and enjoy.


Arabian Night Beef Recipe


Recipe Ingredients

Salt 1/2 tsp
Black pepper 1/2 tsp
Crushed red pepper 1/2 tsp
Wooster sauce 3 tbsp
HP sauce 2 tbsp
Lemon juice 2 tbsp
Oil 2 tbsp

Recipe Method

Marinate beef under cut with salt, black pepper, crushed red pepper, Wooster sauce, HP sauce and lemon juice for 30 minutes.
Heat up oil in a pan and cook marinated beef slices till its tender.
Smoke with coal.
Serve with lemon wedges.
