Recipe Ingredients
3 cups multigrain cereal
1 tbsp active dry yeast
2 tbsps olive oil
1 cup boiling water
2.5 cups bread flour
to taste salt
1.5 cups whole wheat flour
1 tbsp sugar
1 tbsp flax
2 cups water
Recipe Method
Put cereal in a large bowl, stir in boiling water and set aside for 20 minutes.
Add yeast and stir until dissolved.
Add a cup of bread flour and oil, honey, and salt and stir until smooth.
Gradually stir in rest of flour, both bread and whole wheat, until have moist dough.
Cover bowl with a cloth and let it sit for 20 minutes.
Put dough on a lightly floured surface and knead it until it’s smooth.
Put dough in a large, lightly oiled bowl, turning it until covered with oil. Cover with a cloth and let it rise until it doubles in size
Punch dough down and put it on a lightly floured surface. Knead it for about five minutes, then shape into a loaf.
Sprinkle seeds on loaf. Cover with a cloth and let rise until doubled
Preheat oven to 400 degrees, with a pan on the lower rack. Brush the loaf with cool water, sprinkle on the remaining seeds
When the oven is hot, pour two cups of tepid water into the pan and place the bread on the rack above it.
Bake about 30 minutes.
