Korean Homemade Noodles

INGREDIENTS
Chopped Pok Choy: 1
Chopped Baby Corns: 3-4
Chopped Mushroom: 5-6
Chopped Spring Onion : 1
Chopped Bok Choy: 3-4
Shallots: 5-6
Red Chillies: 2-3
Dry Red Chillies : 5
Thai Ginger: 1 tbsp.
Celery: 1
Lemon Juice: 2 tbsp
Vegetable Stock: ¼ cup
Water: as required
Salt: to taste
Wheat / Atta Noodles: 2 cups
Chopped Thai Ginger : 1 tsp
Oil : 1 tbsp.
Chopped Shallots : 2-3
Chopped Garlic : 1 tsp
Vegetable Stock : ½ cup
Salt : to taste
Sesame Oil : 1 tsp.

For Kimchi salad:

Chopped Cucumber: 1
Chopped Green Chillies: 1
Chopped Coriander Leaves: few
Red Bell Pepper: 1
Yellow Bell Pepper: 1
Lemon Juice: 1 tbsp
Flax Seeds: ½ tsp
Water: as required
Sugar: ½ tsp.

PROCESS
For Kimchi paste, in a blender, add shallots, red chillies, dry red chillies, thai ginger, celery, lemon juice, vegetable stock, salt & blend it.
In a pan, add water, salt, chopped thai ginger, wheat Noodles, sesame oil & boil it.
Chop the Pok choy, babycorns, mushrooms, spring onion, Bok Choy, garlic, shallots.
In a pan, heat oil & add chopped thai ginger , shallots , garlic, mushrooms, baby corns, bok Choy, spring onion, vegetable stock, pok choy, salt , kimchi sauce, flax seeds, water& mix well.
For kimchi salad, Chop the cucumber, green chillies, coriander leaves, red bell pepper, yellow bell pepper & add it in a bowl.
Now add lemon juice, kimchi sauce, sugar & mix well.
Now top the noodles with veggies mixture.
Serve the dish with kimchi salad.
Your Korean Homemade Noodles is ready.
