Cream Of Vegetable Soup



INGREDIENTS
500 ml vegetable stock
50 gms green peas
50 gms french beans chopped
3-4 carrots chopped
100 gms cauliflower chopped
50 gms mushrooms chopped
2 tbsps butter
1 tbsp refined flour
1 inch cinnamon Stick
100 ml milk
2 onions chopped
Salt & pepper to taste
3-4 cloves
1 cup garlic croutons

PROCESS
Heat oil in a pan and sauté the cloves, cinnamon stick, garlic and onions till the onions appear translucent.
Add the cauliflower, mushrooms and green peas and cook well. To this add the butter and mix.
Then add the refined flour to the vegetables, along with the milk and vegetables stock.
Bring the milk to a boil and then take the pan off the stove.
Blend all the ingredients in a food processor to form a creamy purée.
Introduce this purée back into the pan.
Then add the french beans and carrots and boil for just a few minutes.
Serve hot with garlic croutons.
