INGREDIENTS
Tomato 1
Spinach 4-5 leaves
Olive oil 2 tbsps
Chopped garlic 1 tsp
Chopped onion 1 medium
Chopped green capsicum 1 medium
American corns, blanched ½ cup
Salt to taste
Red chilli powder 1 tsp
Cottage cheese,crumbled 1 cup
Brown bread slices 4
Butter as required
Grated processed cheese 4 tbsps
For Garnishing
Cherry tomatoes
PROCESS
Roughly chop the tomatoes and spinach.
Heat olive oil in a pan, add garlic and saute till light brown.
Add chopped onions and saute till golden brown.
Add chopped tomatoes and saute till pulpy.
Add chopped green capsicums, American corns and spinach and saute for a minute.
Add salt and red chilli powder and saute well.
Add cottage cheese and mix well for 2 minutes. Remove from flame and keep aside.
Heat another pan.
Cut the brown bread slices with round cutter.
Apply some butter on one side of the bread. Place the bread slices onto the pan and shallow-fry till light golden brown on both the sides.
Remove on chopping board and place the cottage chesse mixture on top of the breads.
Grate some cheese on top of the cottage cheese mixture and transfer again onto the pan.
Cover and cook till cheese melts.
Remove the pizzas onto a plate and garnish with cherry tomatoes.
