Ingredients
3 slices of ciabatta 50g or 2 oz each
3 tomatoes
2 tsp of olive oil
2 tbs of fresh basil leaves
100 g of mushrooms
25 g of low fat cheese
Method
1. Preheat your grill and chop the tomatoes and mushrooms.
2. Place the tomatoes and mushrooms on the ciabatta slices, drizzle with the olive oil and sprinkle with fresh basil.
3. Grill for a few minutes at a medium heat.
4. To finish, sprinkle the grated cheese on top and return to the oven for a further minute or so until it has browned.
