Potato Scotch Eggs



Ingredients
6 boiled potato (mixture)
6 small eggs (boiled)
1 extra large egg (beaten)
1 cup breadcrumbs
2 tbsp diced green coriander
Salt and paper to taste
Method
First mix the salt and paper in potato mixture.
Divide the potato mixture into six and make a cover round each hard boiled egg.
Coat with beaten egg, then roll in the breadcrumbs.
Heat the oil in a deep frying pan and cook each egg for about 3-4 minutes.
Drain well on towel paper.cut from middle and serve for snake & Enjoy!
