Bhatura


Ingredients:
For Dough: All Purpose Flour 500 grams Baking Powder 1 tsp Semolina ½ cup Sugar 1 tsp Oil for frying Salt to taste For Filling: Chicken (Finely Mince) 200 gram Onion 1 Ginger Garlic Paste 1 tsp Red Chili Powder 1 tsp Black Pepper Crushed ½ tsp Lemon Juice 1 tsp Fresh Coriander ½ Bunch Green Chilies 4-5 Clarified Butter 6 tbsp Salt to taste.
Method:
Take a mixing bowl add ½ kg of all purpose flour add 1 sp of baking powder,1/2 cup of semolina, 1 tsp of sugar and a pinch of salt mix it well and make a soft dough. Then heat a some oil or clarified butter in a cooking pan add 1 chopped onion, 1 tsp of ginger garlic paste fry then add 200 grams of chicken mince when the chicken colour is changed add tsp of red chili powder , ½ tsp of crushed black pepper,1 tsp of lemon juice, ½ bunch of fresh coriander 4-5 green chilies and a pinch of salt. Take a dough and make a small balls roll the each balls spread the chicken minces and close with the help of hand. Heat the oil in a deep wok deep fry the bhatura’s and serve it hot.

Recipe Ingredients

Boiled chickpea 3 cup
Onion 2 tbsp
Flour 2 cup
Soda a full pinch
Salt to taste
Curd 3 tbsp
Red chili powder 1 tsp
Crushed Red chili 1 tsp
Rock salt (kala namak) 1/4 tsp
Coriander powder 1 tbsp
Whole spice powder as required
Dry fenugreek leaves 1 tsp
Tamarind paste 1/4 cup

Recipe Method

Heat oil in a pan and cook onion and boiled chickpeas in it on medium heat.
Combine Coriander powder, red chili powder, crushed red chili, 1 tsp salt, rock salt and add 1/4 cup water. Mix well and pour this mixture into the chickpeas.
Add 3-4 cup water and cook on low heat till the onion dissolves completely.
Add tamarind paste and mix.
Mash the chickpeas a bit.
Add fenugreek leaves and whole spice powder.
Takeout in a bowl and garnish with green coriander and onion rings.
Mix flour with pinch of salt, soda, curd, water and make soft dough for bhatura.
Leave the dough for about 3 hours.
Make small balls of the dough and with the rolling pin, spread it out and make the round thin bhatura.
Deep fry till the bhatura gets nice light brown (like Puri).
Serve Chana Bhatura and enjoy.
