Recipe Ingredients
250g caster sug
3 limes , finely grated zest of 1 and juice of 3
1 pineapple , peeled, cored and cut into chunks
2 mangoes , peeled and cut into chunks
Recipe Method
Bring the caster sugar, lime zest and lime juice to a boil with 200ml water. Simmer for 5 minutes, skim and cool. Whizz the fruit with the lime syrup in a food processor until smooth. Freeze for 3-4 hours until firm.
