Vegetable Calzone

Ingredients:
Pizza dough 1
Grated cheese 1/2 cup
Mixed Italian herbs
Chilli flakes

For the Filling:
Carrot (peeled and chopped) 1
Corn 1/2 cup
Chopped capsicum 1/2 cup
Onion (thinly sliced) 1
Chopped tomatoes 2
Sugar 1 tsp
Chilli flakes 1 tsp
Dried basil 1 tsp
Oil 2 tbsp
Salt to taste

Method:
For filling, heat oil. Add onions and sauté till translucent. Add the chopped tomatoes and sugar. Cook till tomatoes are done. Now add all the veggies and sauté well. Add 1/2 cup water and cook till water is absorbed and veggies are half cooked. Add salt, chilli flakes and mix well. Remove from flame, add basil and set aside.
To make the Calzone pockets: Take the raised pizza dough and punch back and knead well. Make 4 equal sized balls. Roll a portion into a circle. Spread the filling in one half. Add grated cheese. Close with other half, seal the edges and press with a fork. Transfer gently to a greased and floured baking sheet. Bake at 180 degrees C for 18-20 minutes till the top turns golden brown. Serve hot.
