Recipe Ingredients
Pumpkin½ kg
Ginger garlic paste2 tbsp
Tomatoes boiled2
Onion2
Coriander leaves¼ bunch
Green chilies4
Crushed red pepper1 tbsp
All spice powder1 tsp
Turmeric1 tsp
Mustard seeds½ tsp
Onion seeds½ tsp
Saltto taste
Oil¼ cup
Recipe Method
Cut ½ kg pumpkin into small cubes, heat ¼ cup oil in a wok, add 2 chopped onion and 2 tbsp ginger garlic paste. Fry well till onion is just tender.
Now add 2 boiled chopped tomatoes, 1 tbsp crushed red pepper, 1 tsp al spice powder, 1 tsp turmeric, ½ tsp mustard seeds, salt to taste and ½ tsp onion seeds. Fry well for 1 – 2 minutes.
Add in chopped pumpkin with 1 cup of water. Cover and cook for 15 – 20 minutes.
Lastly add 4 chopped green chilies and ¼ bunch of chopped coriander leaves. Dish it out and serve hot.
