Recipe Ingredients
1/2 cup arhar dal
1/2 tsp turmeric powder
1/2 cup bottle gourd pieces
1/2 cup split red lentil
1/2 cup baby corn pieces
2 green chillies
1/2 cup red pumpkin pieces
1 cup finely chopped tomatoes
2 finely chopped onions
1 tbsp ginger garlic paste
1/2 tbsp chilli powder
1 tbsp coriander cumin seeds powder
3 tbsps freshly grated coconut
1 tsp garam masala
to taste salt
1/4 chopped coriander
5 tbsps oil
Recipe Method
Wash and soak lentils for half an hour. Drain.
Pressure cook lentils with 3 cups of water, turmeric powder and salt till done.
Whisk till lentil is mashed and keep aside.
Heal oil in a pan, add onions and saute’ till onions turn translucent.
Add tomatoes ginger garlic paste, grated coconut, coriander cumin seed powder, red chilli powder, garam masala and saute’ for 3 minutes.
Add pumpkins, baby corn, green chillies, cooked lentil and 1 cup of water and bring to a boil.
Simmer till vegetables are done and add coriander.
Simmer for more minutes
Serve hot.
