Recipe Ingredients
350 grams Rice
3 onions sliced
1/2 tbsp Garam masala
1/2 kilo Mutton pieces
1 Cinnamon
2 tbsps Ginger garlic paste
Red chilies
4 Green cardamom
1/2 cup Yogurt
4 Cloves
4 Pepper corns
1 tsp Turmeric powder
3 apricots
1 tsp Black cumin seeds
1/2 cup Coriander leaves
pinch Saffron dissolved in 1/4cup of milk
1/2 cup Dry fruits
as required Clarified butter
1/2 cup Mint leaves
Recipe Method
In a pan heat 3 tbsp of clarified butter fry dry fruits and apricots. Grind fried onions and red chilies to a paste.
Marinate mutton pieces with yogurt, ginger garlic paste, onion paste, turmeric powder and salt .
In a pressure cooker heat clarified butter
Add the marinated mutton and pressure cook till done.
Heat clarified butter in another vessel, add whole spices, fry for a while and then add washed rice.
Add salt , warm water so that comes 1 1/2 inch above the rice and cook till rice is done.
Remove, spread out to cool and remove the whole spices.
Apply clarified butter to a heavy bottomed vessel, add cooked mutton and sprinkle garam masala.
Cover with a layer of rice, followed by a clarified butter and then saffron milk.
Add fried nuts, cover tightly and cover for 15 minutes.
Mix it well
Serve hot.
