Recipe Ingredients
Water 1 cup
Butter ½ cup
Plain flour 1 cup
Salt pinch
Egg 4
Cream 1 cup
Sugar for caramel sauce ½ cup
Recipe Method
Put water and butter in a pan, over low heat, until butter melted.
Bring to boil, and then add flour and salt at once.
Stir until mixture form a ball and leaves side of pan.
Remove from heat immediately.
Put the mixture into a bowl, allow mixture to cool slightly.
Beat eggs into a bowl until just combined.
Beat pastry mixture on lowest speed of electric beater.
Add eggs gradually, beating well after each egg addition.
Mixture should be very thick, smooth & glossy.
Drop rounded spoonfuls of mixture on to lightly greased baking tray.
Bake at 180 c for 20 minutes.
When puff are in golden color, remove from the oven and place on a wire rack.
Make a slit into puff’s to fill cream or custard.
Put sugar on pan, keep on low heat to make caramel sauce.
Drip the caramel sauce on to the puffs.
