Chicken Nuggets by Zarnak Sidhwa


Ingredients:
Chicken boneless (cubed) 1/2 kg
Salt 1/2 tsp
Black pepper 1/2 tsp
Egg 1
Milk 1/4 cup
Lemon juice 1 tbsp
Ingredients for Batter
Flour 3 tbsp
Corn flour 2 tbsp
Baking powder 1 tbsp
Water 1/2 cup
Salt 1/2 tsp
Black pepper 1/2 tsp
Fries to serve
Method:
Marinate chicken with salt, black pepper, egg, milk and lemon juice. Make batter dip chicken in batter and deep fry till light golden and crisp. Serve with fries and ketchup.

Nuggets with Dip

Ingredients:
Boneless chicken breasts 2
Salt to taste
Lemon juice 2 tsp
Fresh parsley 2 tsp
Thyme 1 tsp
Egg 1
Breadcrumbs 1 cup
Oil for deep-frying
Fresh parsley for garnish

For Dip:
Mayonnaise 4 tbsp
Tomato ketchup 2 tbsp
Paprika powder 1 tsp

Method
Slice chicken breasts into bite size pieces and put in a bowl. Add salt, lemon juice, 1 tsp chopped parsley and thyme. Rub the pieces well and set aside to marinate. Break egg in a bowl and beat well. Add this to the marinated chicken and mix well. Spread breadcrumbs on a plate. Coat marinated chicken pieces evenly in breadcrumbs and deep-fry in hot oil till golden and crisp. Drain on absorbent paper.
To make dip, combine mayonnaise, tomato ketchup, paprika powder and mix well. Add 1 tsp chopped parsley and mix well. Garnish crispy chicken pieces with little chopped parsley and serve hot with prepared dip.

Paneer Nuggets

Ingredients:
Cottage cheese (grated) 200 gm
Chopped coriander leaves 1 tbsp
Turmeric powder 1/2 tsp
Cumin powder 1/4 tsp
Coriander powder 1/4 tsp
Salt to taste
Chaat masala 1/4 tsp
Red chilli powder 1/2 tsp
Lemon juice 1 tbsp
Sugar 1/2 tsp
Flour 4 tbsp
Black pepper powder to taste
Bread crumbs 1/2 cup
Oil for deep frying + ¼ cup

Method:
Put grated cottage cheese, turmeric powder, cumin powder, coriander powder, salt, chaat masala, red chilli powder, lemon juice, sugar and coriander leaves into a bowl and mix well.

Mix flour, salt and black pepper powder in another bowl, add sufficient water and mix well to make a smooth thick batter. Spread the breadcrumbs on a plate, add salt and black pepper powder and mix well. Heat sufficient oil in a wok.
Divide the cottage cheese mixture into small equal portions and shape them into nuggets. Dip them in the batter, roll in spiced breadcrumbs and deep fry in hot oil till golden brown. Drain on absorbent paper. Serve hot.

TENDER CHICKEN NUGGETS

INGREDIENTS:

Chicken Boneless 1kg

Corn Flakes 2 cups

Cheddar Cheese ½ cup

Salt 1 tsp

Black Pepper 1 tsp

Garlic Powder 1 tsp

Lemon Juice 1 tbsp

Milk ½ cup

Eggs 2

Oil for frying as required

METHOD:

Make small pieces of boneless chicken and in a dish add ½ cup cheddar cheese, 1 tsp salt, 1 tsp black pepper, 1 tsp garlic powder, 1 tbsp lemon juice and ½ cup milk and mix it properly and keep it for 2 hours.

Now mix it properly with your hands so that the masala gets absorbed in it.

Now beat 2 eggs and chop the chicken in the eggs and put 2 cup corn flakes and fry it in hot oil.

Recipe Ingredients

Chicken 1/2 kg
Black pepper 1/2tea spoon
Salt to Taste
Bread Crumbs 2 cups
Oil for frying

Recipe Method

Trim the chicken
Take the chicken breast and cut off all excess skin, fat and bones.
Chunk the chicken
Cut the chicken into small chunks so they will fit into the blender. Option: Leave the chicken in chunks or slices if you prefer chicken tenders; in that case do not blend the chicken in step 5.
Dry the bread
To make your own breadcrumbs the bread you use needs to be dry. This means stale bread. If you only have fresh bread, then place the slices in the oven at 100 C for one hour until they are dried – not toasted.
Make the breadcrumbs
Once the bread is dried, break it up into pieces and place it in your blender. Put the lid on and switch it on to the appropriate setting to make your breadcrumbs. Add any seasoning. Once the seasoning is nicely mixed pour the breadcrumbs into one of the bowls.
VIDEOJUG TIP
You can add any flavouring at this stage. From spices to herbs, garlic, salt to parmesan cheese. This recipe uses just some salt and pepper.
Blend the chicken
Wipe out the blender with some kitchen paper and add the chicken breasts. Pulse the chicken until roughly chopped. Now add the herbs and switch on the blender again, making sure the herbs are blended well with the chicken. Once that is done, pour the mixture into one of the bowls.
VIDEOJUG TIP
You could add herbs at this stage too for example, 1 teaspoon of dried basil, coriander or tarragon and some more salt and pepper.
Beat the eggs
Take the 2 eggs, crack them into a bowl and beat them together.
Prepare the coating
Line up the chicken mix, the flour, the eggs and the breadcrumbs in the four bowls.
Shape the nuggets
Rub your hands with some flour to avoid them becoming too sticky! Then take some chicken mixture and roll it in the palm of your hands to create a smooth ball shape about the size of a ping pong ball.
Coat the nuggets
Now take the nugget and roll it in the flour. When totally covered, roll it in the egg. Next, roll the nugget in the breadcrumbs and place it on a plate. Gently press down on it with the flat side of a knife to form the perfect nugget shape
Take your frying pan and put the vegetable oil into it. Heat the pan to medium so that the oil is hot but not smoking. Place the nuggets into the pan and cook gently on a low heat for about 5 minutes turning them every few minutes so they don't burn.
Serve and enjoy!
Once cooked place the nuggets on kitchen paper to drain any excess oil. Then serve with salad, chips or a dip.
