Sindhi Rabri Kheer


Aalu ki kheer

Ingredients

Butter 2 tbsp

Milk 1 liter

Condensed milk 1 tin

Saffron ¼ tsp

Potatoes 250 gm peeled, boiled and mashed

Almonds and pistachio 2 tbsp

Cardamom powder ½ tsp

Method

Heat butter in a pan add milk, when it boils add mashed potatoes, cook stirring with a whisk add condensed milk, saffron, green cardamom powder, cook till thick, remove, garnish with almonds and pistachio.

Steam fried chops

Ingredients

Mutton chops ½ kg ( 8 to 10)

Whole mixed spices 1 tbsp

Coriander seeds 1 tbsp

Water 1 ½ cup

Ingredients for batter

Yogurt ½ cup

Salt 1 tsp

Ginger garlic 1 tsp

Allspice ½ tsp

Chili powder 1 tsp

Coriander powder 1 tsp

White cumin crushed 1 tsp

Crushed anar dana 1 tsp

Gram flour 1 tbsp heaped

Vinegar 2tbsp

Turmeric ¼ tsp

Egg 1

Method

Cook chops with whole spices, coriander seeds and water till chops tender. Mix all ingredients for batter in a bowl add your steam chops in this batter, deep fry till golden.

Ingredients:
Rice 100 gm
Condensed milk 1 can
Milk 1 liter
Cardamom powder to taste
To Garnish:
Chopped plain pistachios 3-5
Chopped almonds 3-5
Method:
Wash the rice well and drain and let dry. Bring the milk to boil. Add in the rice and cook it for 10 to 15 minutes, stirring it constantly. Continue stirring and bring the mixture to boil twice again. Reduce the heat and check if the rice is tender. If not, then boil it for few more minutes. Stir in the cardamom powder and the sweetened condensed milk at lower heat and cook for another 5 to 7 minutes. Pour the kheer into a serving bowl. Chill well and serve decorated with chopped pistachios and almonds.

Apple Kheer Recipe

Recipe Ingredients

3 Peeled apples3
1.5 cups Milk
6 Sliced almonds
to taste Sugar
pinch Cardamom powder
4 Pistachio slivers

Recipe Method

In a pan boil milk and add sugar.
Mix well and cook gently till mixture is reduced to half.
Grate apples and add milk and simmer for five minutes.
Remove from the flame
Sprinkle cardamom, pistas and almonds on top.
Serve.


Kheer (Rice Pudding) Recipe

Recipe Ingredients

2 cups coconut milk
2 cups milk
3 tablespoons white sugar
1/2 cup Basmati rice
1/4 cup raisins
1/2 teaspoon ground cardamom
1/2 teaspoon rose water (optional)
1/4 cup sliced almonds, toasted
1/4 cup chopped pistachio nuts

Recipe Method

Bring the coconut milk, milk and sugar to a boil in a large saucepan. Add basmati rice, and simmer over low heat until the mixture thickens and the rice is tender, about 20 minutes.
Stir in the raisins, cardamom and rose water, and cook for a few more minutes. Ladle into serving bowls, and garnish with almonds and pistachios.


Seviya Kheer Recipe

Recipe Ingredients

Seviya/Vermicelli – 1/2 cup
Ghee/Clarified Butter – 1/2 tbsp
Milk – 6 cups
Sugar – 4 tbsp or to taste
Raisins – 1 tbsp
Almonds – 1 tbsp
Elaichi / Cardamom Powder – 1/4 tsp
Saffron – a pinch

Recipe Method

Heat the Ghee/Clarified Butter in a pan on medium heat.
Roast the Seviya/Vermicelli in the Ghee.
Keep stirring till the Seviya changes color to a light golden.
Add Milk, mix and cover to allow it to come to a boil.
Once it reaches a boil, remove cover and reduce heat.
Stir frequently and allow it to reduce and thicken to the required consistency.
Add the dry fruits – Raisins & Almonds and the Saffron. Mix
Add in the Sugar and mix well.
Finally when ready, sprinkle Powdered Cardamom, mix and allow the flavors to infuse.
Serve hot or cold.
