BEEF AND CHEESE TART


Ingredients:
Beef mince 250 gms
Ginger garlic paste 1 tsp
Black pepper 1 tsp
Crushed red pepper 1 tsp
Salt 1 tsp
Cumin 1 tsp (roasted and ground)
Red chili garlic sauce 1 tbsp
Sweet sauce 1 tbsp
Tomatos puree 2 tbsp
Oregano 1 tbsp
Cream 1 tbsp
Chopped olives as required
Cheddar cheese 4 tbsp (grated)
Oil As required
Ingredients for Base:
Saltish crackers
Butter 2 tbsp
METHOD:
Crush the crackers and mix with butter. Press down in the bottom of a pie plate. Bake for 15 minutes on 180 degrees. Heat oil, fry mince with ginger garlic and all the spices until done. Spread over the pie base spread with cheese and bake till cheese melts.

Cheese Pizza Muffin


For pizza dough:
For white flour 250 gm
Yeast 1 tbsp
Sugar 1 tsp
Egg 1
Baking powder 1 tsp
Milk ½ cup
Salt 1 pinch
Luke warm water as required

Pizza topping:
Boiled shredded chicken 300 gm
Chopped capsicum 1
Chopped tomato 1
Pizza sauce 1 cup
Grated mozzarella cheese 200 gm
Olives ½ cup
Oregano ½ tsp
Butter
3 to 4 tbsp

Method:

For dough:

In lukewarm water add 1 tbsp yeast with 1 tsp sugar to mix and leave for 15 minutes to rise. Then in a bowl add 250 gm white flour, 1 pinch salt, 1 egg, 1 tsp baking powder and yeast to mix and knead with ½ cup milk and leave it for 3 to 4 hours on a warm place and fold it with the help of hand. For topping: first grease the muffin tray with 2 to 3 tbsp butter. Roll the dough and cut it and set on muffin tray. Now place any weighted object and bake it in oven for 4 to 5 minutes on 200 c. in a mixing bowl add 1 cup pizza sauce, 300 gm boiled chicken, 1 chopped capsicum, 1 chopped tomato, 200 gm grated mozzarella cheese and ½ cup olives to mix and fill the muffin tray with the mixture and bake it again on 200c for 4 to 5 minutes and serve hot.

Lighter cauliflower cheese


Ingredients
400ml semi-skimmed milk
2 tbsp cornflour
2 garlic cloves
1 large cauliflower, about 1kg, untrimmed
75g extra-mature cheddar, coarsely grated
25g Parmesan, coarsely grated
1 tbsp snipped chives
1½ tsp Dijon mustard
150ml buttermilk
Method
Mix 2 tbsp of the milk with the cornflour and set aside. Press the garlic cloves in a garlic crusher to smash – but not crush – them. Put them in a pan with the rest of the milk and heat until just coming to the boil. Immediately remove from the heat and leave to infuse.
Trim any leaves from the cauliflower and cut out the thick main stalk, then cut the cauliflower into florets. Bring a large pan of water to the boil. Add the cauliflower, return to the boil, then simmer for about 5 mins until just cooked but still with a bit of bite.
Heat oven to 200C/180C fan/gas 6. Tip the cauliflower into a large colander, drain well, then transfer to a shallow ovenproof dish, about 1.5 litres (see tip, left). Mix both cheeses together. Stir 2 heaped tbsp with the chives and a grinding of pepper, and reserve for sprinkling over.
Stir the cornflour mix into the warm milk. Return the pan to the heat and bring to the boil, stirring, until thickened and smooth. Remove from the heat, discard the garlic, then stir in the cheese until it has melted. Stir in the mustard and buttermilk, and season with pepper. Pour the sauce over the cauliflower to evenly coat, then sprinkle over the reserved cheese mix. Bake for about 25 mins or until bubbling round the sides and golden on top.

Ingredients:

Bread (Big Slice) 10-12 Mozzarella Cheese (Slice) 200 grams Red Chili Flakes 1 tbsp Eggs 2-3 Corn Flour 2-3 tbsp Oil For Frying

Method:

Take 10-12 pieces of bread slices cut the corner of bread slice with the help of rolling pin. Take 200 grams of mozzarella cheese sprinkle the 1 tbsp of red chili flakes to the mozzarella cheese. Add the cheese on the bread slices and roll the bread slice. Beat the 2-3 eggs and add 2-3 tbsp of corn flour. Dip the bread roll into the eggs mixture and deep fry the rolls and serve it.

Recipe Ingredients

Bread slices6
Onion chopped1
Green chili chopped2 – 3
Cheddar cheese100 gm
Tomato ketchup3 tbsp
Tomato sliced 2
Salt to taste
Black pepper powder¼ tsp
Chili powder½ tsp
Mustard paste1 tbsp
Ice berg½ flower
Mayonnaise¼ cup

Recipe Method

Mix together 1 chopped onion, 2 – 3 chopped green chilies and 100 gm grated cheddar cheese.
Add in 3 tbsp tomato ketchup, half flower of chopped ice berg, salt to taste, ¼ tsp black pepper, ½ tsp chili powder, 1 tbsp mustard paste and 3 tbsp mayonnaise.
Now put a little cheese mixture on each bread slice, cover with another slice.
Toast in a grill pan with a little butter or mayonnaise until golden brown.
Now cut into wedges and serve with ketchup.
