KASHMIRI NAAN by Rida Aftab



Ingredients:
Flour 3 cup
Milk 2 cup
Eggs 2
Yeast 2 tsp
Backing Powder ½ tsp
Sugar 4 tbsp
Salt 1 tsp
Oil ½ cup
Dry Fruits as required
METHOD:
In a dish knead together 3 cups flour, 2 eggs, ½ tsp backing powder, 4 tbsp sugar, ½ tsp salt, ½ cup oil and 2 cups of milk cover and leave the dough to rest for an hour. Now shape the dough into small naans, brush with a little oil and sprinkle with dry fruit. Let it bake 180C in the oven.

Garlic Alsi Naan Recipe

Recipe Ingredients

White flour 2 cup
Yeast 1 tbsp
Chopped garlic 4 to 5 cloves
Flax seed 1 tsp
Sugar 1 tsp
Butter 1 cup
Salt to taste

Recipe Method

In luke warm water add 1 tbsp yeast with 1 tsp sugar to mix and leave for while. When yeast rise add in a mixing bowl with 2 cup white flour, 4 to 5 cloves, salt to taste and 1 cup of butter leaving 2 to 3 tbsp butter behind and knead with water or milk. Then leave it for 2 to 3 hours. Then make balls from dough and roll it thick then make marks with the help of the fork and sprinkle flax seed from top. Heat oven on 200 c and bake them for 8 to 10 minutes. Then brush with butter and again brush it for 1 to 2 minutes and serve hot.


Kashmiri Meetha Naan

Recipe Ingredients

White flour 2 cup
Yeast 1 to 1 ½ tsp
Egg 1
Sugar 1 tsp
Butter 1 cup
Salt to taste

For filling:

Dry fruits ½ cup
Sugar 2 to 3 tbsp
Honey 2 tbsp

Recipe Method

For filling: in a bowl add ½ cup dry fruits, 2 to 3 tbsp sugar and 2 tbsp honey to mix. In lukewarm water add 1 ½ tsp yeast and 1 tsp sugar to mix and leave it. When it rises add in a mixing bowl with 2 cup white flour, salt to taste and 1 cup butter leaving 2 to 3 tbsp aside. And knead it with water or milk to form dough and make balls. Now roll it with the rolling pin and place filling in the center and fold it. Abd brush it with egg or butter. Bake it in oven on 200 c for 5 minutes. Brush it again with butter and bake it 1 to 2 minutes and serve hot.


Naan Recipe

Recipe Ingredients

4 cups all purpose flour
1 tsp baking powder
1 egg - beaten
6 Tblsp plain yogurt
3 Tblsp butter or ghee - melted
1 Cup milk
1 Tblsp poppy seeds
Salt to taste

Recipe Method

Sift flour, baking powder or baking soda and salt together in a bowl.
Stir in egg, yogurt and 2 tablespoons of the butter.
Gradually stir in enough milk to make a soft dough.
Cover with a damp cloth and place in a warm place for 2 hours.
Preheat oven to 400 degrees F (205 C) Knead dough on a floured surface for 2 or 3 minutes until smooth.
Divide into 8 pieces Roll each piece into a ball then into ovals about 6inches long.
If you must use a baking sheet, grease it and brush the underside of the bread with water.
Brush the other side with butter and sprinkle poppy seeds.
Bake 6 to 10 minutes until puffy and golden brown.
