ALOO KA RAITA



INGREDIENTS
Boiled Potatoes 2
Yogurt 250g
Onions 1
Finely Chopped Tomatoes 1
Green Chilies 2
Crushed Red Chilies 1 tsp
Garlic 1 tsp
Cumin 1 tsp
Maggi in henses ½ tsp
Salt ½ tsp
Green Coriander 2 tbsp
Oil 3 tbsp
METHOD:
Heat 3 tbsp oil and add 1 tsp garlic and fry them. When aroma comes, then add 1 tsp crushed red chilies, ½ tsp salt, 1 tsp cumin, 1 onion, 2 finely chopped boiled potatoes, 1 finely chopped tomatoes and 2 tbsp green coriander and cook it for 1 minute and then close the stove.
Then add ½ tsp maggi in henses and 250g yogurt and bear it and mix it properly. Delicious aloo ka raita is ready to serve.

Fresh Coconut Raita



Recipe Ingredients
Plain Yogurt 1 1/2 Cups
Freshly Scraped Coconut 1/2 Cup
Onion 1/2 Small
Green Chiles 2
Raisins 6
Cashews 3
Salt to taste
Talimpu:
Mustard Seeds 1/4 tsp
Cumin Seeds 1/4 tsp
Urad Dal 1/4 tsp
Broken Red Chiles 4
Curry Leaves 4
Oil 1 tsp

Recipe Method
Remove stems, wash and slice the green chiles.
Peel and finely chop the onion.
Whisk yogurt with scraped coconut, few tablespoons of water and salt.
Heat oil in a pan, add all talimpu ingredients in order.
When mustard seeds start spluttering, add green chiles, onion, raisins and cashews.
Fry till onion becomes translucent and changes color, remove from heat.
Let the tempering cool a bit before adding to the yogurt bowl.
Mix well and serve fresh coconut raita with biryani or with paratha.

Baingan Ka Raita



Ingredients
1-2 Big or med sized baingan
1-2 cup yogurt
2 Green Chili (chopped)
2 tsp Coriander(chopped)
1 onion (chopped)
1 tsp cumin seeds (roasted and grind)
1 tsp red chili flakes(roasted and grind)
1/4 tsp black paper powder
Salt to taste
Method
Wash the baingan(eggplant) and poke them with knife.Keep it for roasting,in the oven flame.Keep turning the baingan after few mins, so that it gets cooked everywhere completely. Turn off the oven when the baingan shrinks in size and skin of baingan has charred nice.
Let the baingan cool for 5-10 mins. Later peel its charred skin,discard the stem. Now mash baingan nicely using hand or fork. Next to the mashed baingan add salt,green chili,onion, cumin seeds,red chili flakes,black paper and yogurt. Mix well.If required add some more yogurt and adjust the consistency. Add chopped onion and coriander leaves.Mix everything.
Serve this yummy raita with lunch or dinner as a side dish and Enjoy!!!

PALAK KA RAITA



INGREDIENTS
Yogurt 250g
Spinach 10 leaves
Milk ½ cup
Green Chili Paste 1 tsp
Black Pepper ½ tsp
Salt ½ tsp
Oil for frying
METHOD
In 250g yogurt, add ½ cup milk, ½ tsp salt, ½ tsp black pepper and 1 tsp green chili paste and beat it. Now add 10 spinach leaves, dry them out and fry them in heated oil. When they become crispy, then take them out and crush it and put them in the raita. Palak raita is ready.

PALAK KA RAITA

Lauki Raita Recipe



Recipe Ingredients

1/2 tbsp ghee
1/4 tsp cumin seeds
salt as to taste
100gm lauki chopped (in medium size)
1 tbsp cumin seeds & 2 whole red chilies
20 gm mint leaves finely chopped
150 gm curd + 3 tbsp sugar
4 tbsp water

Recipe Method

take a pan add ghee, cumin seeds crackles are appear .
then add lauki, water, salt.
close the lid cook in slow gas.
after lauki is cooked remove in bowl & cool in to room temperature.
then add curd with sugar, salt.
cumin seeds & red chilies powder (roasted cumin seeds & whole red chilies in oil then crushed & make a powder).
add mint leaves chopped
garnish with cumin seeds & red chili powder.
server chilled.

BENGAN KA RAITA

INGREDIENTS:
Brinjal 4

Fresh Milk 1 cup

Yogurt 3 cups

Sugar 1 tsp

Corn Flour 1 tbsp

Red Chilies 1 tbsp

Ginger Garlic Paste 1 tbsp

Salt to taste

INGREDIENTS FOT BHAGAR:

Oil 1 cup

Whole Red Chilies 6

Curry leaves few

Dry Fenugreek Leaves 4-5

Cumin 1 tsp

METHOD:

Beat 2 cups yogurt, 1 tbsp corn flour, 1 tsp sugar and 1 cup fresh milk and mix it properly.

Now put 4 brinjals in a pan and deep fry them in heated oil and make them golden brown and then spread them.

Now take a pan and heat ½ cup oil and add 1 tbsp ginger garlic paste, 1 tbsp red chilies and salt to taste and cook it and add the fried bringals in it.

In a dish add yogurt and then a layer of masala mixed brinjals and then again a layer of yogurt.

In the end, heat 1 cup oil and add 1 tsp cumin, 6 whole red chilies, few curry leaves and 4-5 dry fenugreek leaves and fry them and prepare the bhagar and put it on the raita.
