Italian Chicken With Peppers & Onion Recipe



Recipe Ingredients

1 1/2 lbs. boneless, skinless chicken breasts
1 cup sliced yellow onion
1 cup sliced green bell pepper
1 pack Knorr® Roasters™ Roasting Bag & Seasoning Blend for Chicken - Garlic Parmesan & Italian Herb

Recipe Method

Preheat oven to 350°.
Place chicken and vegetables inside bag, then sprinkle seasoning blend over chicken and vegetables. Twist bag to close tightly, then secure with blue tie about 2-inches below the opening. Turn bag gently to spread seasoning blend over chicken and vegetables. Lay bag flat in 13 x 9-inch baking dish, arrange chicken in single layer.
Bake 35 minutes. Let stand 5 minutes before opening. Carefully cut open bag and serve.


Italian Cheese Bread Recipe

Recipe Ingredients

2 tablespoons sesame seed
4 1/2 to 5 1/4 cups all purpose unbleached or bread flour
1/4 cup sugar
1 1/2 tspns saltClick to find more about salt
2 small packages pf active dry yeast
1 cup of milk
1 cup of water
1/2 cup of butter or margarine
2 eggs
Filling:
4 ounces (1 cup) shredded Mozzarella cheese
1/2 teaspoon of Italian Seasoning
1/4 teaspoon of garlic

Recipe Method

Grease an oven safe pan, and sprinkle with Sesame seed.
Lightly spoon flour into measuring cup, level off. In a large bowl combine 2 1/2 cups of flour, sugar, salt blend well.
In small saucepan, heat milk, water and 1/2 cup of butter until very warm.
Add warm liquid and eggs to flour mixture.
Blend at low speed until moistened, beat 3 minutes at medium speed. By hand stir in remaining 2 to 2 3/4 cups of flour to form a stiff batter.
In small bowl combine all filling ingredients, mix well.
Spoon half of batter over sesame seed in greased pan, spoon filling mixture evenly over batter within 1/2 inch sides of pan.
Spoon remaining batter over filling.
Cover loosely with plastic wrap, and cloth towel.
Let rise in warm place, until light and doubled in size, about 30 minutes.
Heat oven to 350 degrees Farenhiet. Uncover dough.
Bake 30 to 40 minutes or until golden brown and loaf sounds hollow when lightly tapped. Remove from pan imediately, cool on wir racks.
Serve warm or cool.


Italian Rice With Chicken Recipe

Recipe Ingredients

2 tbsp olive oil
2 skinless boneless chicken breast fillets or 4 boneless thighs, cut into strips
1 red onion , cut into 8 wedges
2 orange peppers , halved, deseeded and sliced thickly
1 garlic clove , crushed
100g long grain rice
400g can chopped tomatoes
300ml chicken stock
4 tbsp ready-made pesto (you'll find long-life jars on the shelves with pasta sauces or more expensive fresh pots in the chiller cabinet)

Recipe Method

Heat oven to 200C/fan 180C/gas 6. Heat the oil in a large, shallow ovenproof pan, add the chicken and cook for 3-4 mins until golden all over. Remove from pan and set aside.
Add the onion and peppers, and cook for 3 mins or until lightly golden. Tip in the garlic and fry for a min. Stir in the rice, then the tomatoes, stock and reserved chicken. Turn up the heat and bring to the boil before transferring to the oven to cook, uncovered, for 20 mins. Season to taste and drizzle over the pesto before serving.

2 garlic cloves, minced
2 teaspoons olive oil
8 cups fresh spinach (about 10 ounces), chopped
1 tablespoon balsamic vinegar
1/2 teaspoon salt
1/8 teaspoon pepper
2 cups hot cooked rice
1/2 cup chopped roasted sweet red peppers

Recipe Method

In a large nonstick skillet, saute garlic in oil for 1 minute. Stir in spinach. Cover and cook for 3-4 minutes or until tender; drain well. Add the vinegar, salt and pepper. Stir in the rice and red peppers until combined. Cook and stir until heated through.


Italian Baked Chicken And Pastina Recipe


Recipe Ingredients

1 cup pastina pasta (or any small pasta)
2 tablespoons olive oil
1/2 cup cubed chicken breast (1-inch cubes)
1/2 cup diced onion (about 1/2 a small onion)
1 clove garlic, minced
1 (14.5-ounce) can diced tomatoes with juice
1 cup shredded mozzarella
1/4 cup chopped fresh flat-leaf parsley
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 cup bread crumbs
1/4 cup grated Parmesan
1 tablespoon butter, plus more for buttering the baking dish

Recipe Method

Preheat the oven to 400 degrees F.
Bring a medium pot of salted water to a boil over high heat. Add the pasta and cook until just tender, stirring occasionally, about 5 minutes. Drain pasta into a large mixing bowl.
Meanwhile, put the olive oil in a medium saute pan over medium heat. Add the chicken and cook for 3 minutes. Add the onions and garlic, stirring to combine, and cook until the onions are soft and the chicken is cooked through, about 5 minutes more. Put the chicken mixture into the bowl with the cooked pasta. Add the canned tomatoes, mozzarella cheese, parsley, salt, and pepper. Stir to combine. Place the mixture in a buttered 8 by 8 by 2-inch baking dish. In a small bowl mix together the bread crumbs and the Parmesan cheese. Sprinkle over the top of the pasta mixture. Dot the top with small bits of butter. Bake until the top is golden brown, about 30 minutes.
