Husseini Seekh Kababs Mughlai Style Recipe

Recipe Ingredients

Meat 2 lb
Almonds 1 1/2 oz
Ginger 1 piece
Cardamoms 4
Garlic 8 cloves
Cream 1 pint
Roasted cumin seed 1 tsp
Milk 1 pint
Dry red chillies 6
Baby pickling onions 1 lb
Ghee 2-3 tbsp
Few coriander leaves
Pistachios 1 oz
Salt to taste

Recipe Method

Grind the ginger, garlic, cumin seed, chilies and coriander to a fine paste.
Add the salt to taste.
Cut meat into desired cubes and rub this paste over it.
Marinate for 2 1/2 hours.
Fix the meat cubes on skewers, placing an onion between each cube of meat.
Grill on a low fire till tender and browned.
In a saucepan heat the ghee, add milk, cream, finely grated almonds and pistachios.
Mix well and cook till slightly thickened.
Garnish with ground cardamoms and serve with the kebabs.


Seekh Boti Recipe

Recipe Ingredients

1/2 kilo Beef (cut into cubes and boiled)
1/2 cup Potatoes (cut into cubes and boiled)
1/2 tsp Turmeric powder
pinch Curry powder
1/2 cup Onions (cubes)
1 tsp Chili powder
1 tsp Pepper
3 Eggs
1 cup Breadcrumbs
1/2 cup oil
to taste Salt
1 Ginger piece
6 Garlic cloves
5 Green chilies
10 tbsps Coriander leaves

Recipe Method

In a grinder grind last four ingredients together
Mix it with remaining powdered spices.
Add the cubed potatoes, meat and onions to the mixture and keep aside for 2 hours.
Thread the pieces on a skewer
Roll in breadcrumbs and dip in beaten egg
In a pan heat oil and fry it till done
Serve hot with chutney.


Kachrey Kabab Recipe

Recipe Ingredients

Beef ½ kg
Onion 2
Ginger garlic paste 1 tbsp
Kachri powder 2 tbsp
Whole red chili 6
Green chilies 6
Cumin powder 1 tsp
Fresh coriander 1 bunch
Salt to taste
Nutmeg ½ tsp
All spice powder 1 tsp
Coconut 2 tbsp (desiccated)
Poppy seeds powder 2 tbsp
Eggs 2
Oil for frying
Salad leaves to garnish
Tomato 2 (to garnish)
Onion 2 (to garnish)
Green chili 5 (to garnish)

Recipe Method

Chop beef with onions, kachri powder, whole red chilies and green chilies in a chopper.
Add in ginger garlic paste, cumin powder, coriander leaves, salt, nutmeg, all spice powder, desiccated coconut, poppy seeds powder and eggs.
Mix well and make round Kebab.
Fry in hot oil on low flame.
Serve hot with garnishing salad leaves, tomatoes, onion, and green chilies.


Balti Qeema Recipe


Recipe Ingredients

Beef mince ½ kg
Onion (sliced) 2
Tomatoes 2
Cinnamon 2-3 sticks
Black peppercorn 1 tsp
Black cumin seeds ½ tsp
Ginger garlic paste 1 tbsp
Red chili powder 1 tbsp
Yogurt 1 cup
Lemon juice 2 tbsp
Green chilies 3-4
Oil 4-5 tbsp
Salt to taste

Recipe Method

Take 4-5 tbsp oil in the pan and add in 2 chopped onions till they are golden brown. Add in chopped tomatoes and cook it. Add in 2-3 sticks of cinnamon, 2-3 big cardamom, 1 tsp black peppercorn, ½ tsp black cumin seeds, 1 tbsp ginger garlic paste, 1 tbsp red chili powder and some salt. Cook it well. Add in ½ kg mince and cook it. Then add in yogurt, cover the pan and tender the mince. Remove the cover and cook it on a high flame. When mince is cooked and gravy thickens add in 2 tbsp lemon juice. Garnish it with green chilies and serve.


Sekh K Pasandy Recipe

Recipe Ingredients

Pasanday___ 1 kg
Salt___ to taste
Seasoning___ 25 grams
Iron rods___ 1 kg
Red pepper and poppy seed___ 4/4 spoon
Roasted grams___ 125 grams
Ginger___ 2 inch piece
Straws___ 12 nos
Thread and Salt___ as required

Recipe Method

Wash pasanday and add salt, dry papaya white cumin(crushed) and with this add garlic after grinding it.
Leave it for 2 hours. Grind poppy seed, salt, ginger, pepper, grams etc on a slab and after 2 hours add these things into pasanday.
Then tie pasanday like thread int the needle into the iron rods and tie with the threads on the iron straws so that pasanday will be straighten on the rods.
Now heat the rods on the low fire of coals.
When they are red then turn them on the other side. Likewise keep on turning the rods on the fire so that all the parts cook well.
Now red the onion into ghee and then grind it and add yoghurt and again spread it on the rods and again heat it.
In the middle keep on adding the remaining oil of onions so that it will become red well.


Kaleji Kebabs Recipe

Recipe Ingredients

Liver 250 gm
Black cardamoms 2
Cinnamon 1
Coriander leaves, chopped 4 tsp
Coriander seeds, roasted 1 tsp
Cumin (jeera) seeds 2.5 gm
All spice 2.5 gm
Garlic cloves, chopped 4
Garlic paste 1 tsp
Ginger, shredded 1" piece
Ginger paste 1 tsp
Oil 60 ml
Onions, grated 60 gm
Onion paste 30 gm
Red chilli powder 2.5 gm
Salad oil 60 ml
Salt to taste
Tomatoes, chopped 120 gm
Turmeric (haldi) powder 1 tsp
Yogurt 60 gm

Recipe Method

Cut liver into 1 inch cubes. Beat together yogurt and salad oil.
Mix in ginger, garlic and onion pastes, salt and turmeric.
Add the liver pieces and leave for an hour.
Blend together roasted coriander seeds, cumin seeds, cloves, cinnamon, cardamoms, chopped ginger and garlic in a mixer with a little water.
Remove liver cubes from the marinade.
Heat the cooking oil in a flat pan and saute liver cubes gently. Remove.
In the same oil add grated onion and saute till golden brown.
Add red chilli powder to the oil with a tablespoon of warm water and stir.
Add the ginger, garlic and blended paste and the left over marinade.
Stir-cook for 5 minutes. Put liver on skewers and place on pan.
Cover and cook for 5 minutes. Finally, add chopped tomatoes.
Cook for another 5 minutes, turning skewers around a couple of times.
Cook till tomatoes are done. Remove from heat.
Transfer to a flat dish with the skewers, sprinkle with all spice and green coriander leaves.
Serve hot with any flat bread

Mutton with bone (large pieces from the leg): 1 kg
Red chilli powder: 8 gm
Cardamom whole: 2
Black cardamom: 2
Coriander leaves: 5 gm
Crushed coriander seeds: 10 gm
Cinnamon: 1 stick
Zeera: 5 gm
Bay leaf: 2
Onion: 400 gm
Mace: 2
Mustard oil: 4 tbsp
Ginger-garlic paste: 50 gm
Curd: 150 gm
Haldi powder: 5 gm
Mutton stock: 2 cups
Salt to taste

Recipe Method

Heat the mustard oil in a heavy bottom pan and drop the whole spices. Cook till the spices start to crackle. Add the chopped onion and fry till golden brown.
Add the ginger-garlic paste and the mutton and cook for five to seven minutes. Then add the crushed coriander seeds, red chilli powder and the haldi powder. Cook further till the meat is half cooked.
Now add the beaten curd and cook till the gravy thickens.
Add the mutton stock and cover the lid and slow cook till the meat is tender. Add the shahi jeera and salt to taste.
Serve hot and garnish with shahi jeera and chopped coriander leaves. Best when served with khamiri roti.


Baked Five Spice Lamb Cutlets Recipe


Recipe Ingredients

1/2 cup dried multigrain breadcrumbs
1 tablespoon sesame seeds
2 teaspoons Chinese five spice powder
1 tablespoon finely chopped fresh chives
1 egg
12 lamb cutlets, trimmed
canola oil cooking spray
crunchy Asian salad, to serve

Recipe Method

Preheat oven to 180°C/160°C fan-forced. Line a baking tray with baking paper. Combine breadcrumbs, sesame seeds, five spice and chives in a large, shallow bowl. Season with salt and pepper.
Whisk egg in a bowl. Dip lamb in egg, then breadcrumb mixture. Place on prepared tray. Spray cutlets lightly with oil. Bake for 30 minutes or until browned and cooked through, turning halfway during cooking. Serve with salad.


Tawa Fried Liver Recipe

Recipe Ingredients

Liver ½ kg
Ginger garlic paste 2 tbsp
Tomatoes 2
Red chili powder 1 tbsp
Turmeric ½ tsp
Cumin seeds 1 tsp
Coriander powder 1 tsp
Tart powder ½ tsp
Nutmeg mace powder a pinch
Salt to taste
Oil as required

Recipe Method

Cut mutton liver into small pieces.
Pour oil and ginger garlic paste in a pan.
After cooking for 2 to 3 minutes, add liver to it.
Fry the liver till it is brown.
Add tomatoes, coriander leaves and all the remaining masala to it.
Add 2 cups of water place the lid on the pan and leave it to simmer.
After 15 minutes, remove the lid and fry it on high flame until the oil separates.
Garnish with coriander leaves, sliced ginger and tomatoes to serve.
Tips:
Salt the liver and leave it for 15 to 20 minutes to get rid of its bad smell.

250 grams Beef mince
1 Eggs whisked
4 Green chili (chopped)
4 boiled eggs
4 Whole Red Chili
2 cups Boiled potatoes
1 cup Bread Crumbs
1 tsp ginger garlic paste
1 tsp hot spices powder
1 tsp Black pepper
1 tsp coriander
1 tsp Cumin seeds
2 tbsps fresh coriander (chopped)
to taste salt
2 cups Oil

Recipe Method

Boil mince in cup water with ginger garlic paste, cumin seeds and whole red chilies
When mince becomes tender and water dries, remove from flame and cool
Grind mince in a blender
Mix mince, coriander, hot spices, black pepper and salt in a bowl
Coat mince over the boiled eggs
Mash potatoes and mix, salt and black pepper, fresh coriander, and green chilies
Cover mince covered eggs with mashed potatoes
Dip the koftas first in egg and then roll in bread crumbs
Heat oil in a wok and fry koftas until golden
Take out on paper towels
