Beef Noodles Kabab



Recipe Ingredients
½ kg beef botiboneless 2 tsp ginger garlic paste 3 medium sized onions 2 tsp red chili powder 1 tbsp all spice powder 1 tsp salt 4 boiled and mashed potatoes ½ packet egg noodles 1 bunch coriander leaves 1 bunch mint leaves 3 chopped chilies 3 eggs.
Recipe Method
Boil beef boti with the aboveingredients till its tender and mix well and forms a smooth mixture. Make sure it has no water in it. Then add potatoes, egg noodles, coriander, mint, green chilies and add eggs in it. Mix well till smooth and well combined. Shape into kababs and fry in the oil.

Malai Seekh Kabab by Zubaida Tariq



RESHMI MURGH KABAB



INGREDIENTS:
Chicken Mince ½ kg
Fat 125g
Onions 2
Green Chilies 4
Crushed All Spices 1 tsp
Salt 1 tsp
Crushed and Roasted Cumin 1 tsp
Crushed and Roasted Coriander 1 tsp
Crushed Red Chilies 2 tsp
Ginger Garlic 2 tbsp
Green Coriander 2 tbsp
Mint Leaves 2 tbsp
Chinese Salt 1 tsp
Oil as required
METHOD:
In a chopper add ½ kg chicken mince, 125g fat, 2 onions, 2 tbsp green coriander, 2 tbsp mint leaves, 4 green chilies and 1 tsp salt and finely chop it.
Now add 1 tsp Chinese salt, 2 tsp crushed red chilies, 1 tsp crushed and roasted whole coriander, 1 tsp crushed and roasted white cumin and 1 tsp crushed all spices and mix it properly.
Now put them on the skewers and put oil as required and bake it in the oven.

Masalay Walay Dum Kabab Recipe



Ingredients

Beef chopped ½ kg
Salt 1 Table Spoon
Red Chili Powder 1 Table Spoon
Garam Masala 1 Table Spoon
Green Chili 2
Coriander Chopped
Ginger & Garlic Paste 1 Table Spoon
Cooking Oil for frying ½ CupIngredients for Garevi:Medium size Onion 2
Tomato 3
Ginger & Garlic Paste 2 Table Spoon
Red Chili Powder As per taste
Salt As per taste
Turmeric Powder ½ Tea Spoon
Coriander Powder 1 Tea Spoon
Cooking Oil ½ Cup
Coal for steam.

Method

Make the mixture of salt, red chili powder, garam masala powder, green chili, coriander, ginger garlic paste and chopped beef and roll into seekh kabab shape. Than fry these rolls in cooking oil till they get light brown.
Well brown the onion in cooking oil than add tomato and ginger garlic paste in it. Add salt, red chili powder, coriander powder and turmeric powder and continue frying. Than put kababs in it and cook on light flame for five minutes. Than steam with coal. Serve after adding garam masala powder , coriander, green chili and ginger.

Chapli Kabab Recipe by Chef Zakir



Ingredients

Beef mince½ kg
Tomatoes2

Coriander leaves¼ bunch
White butter2 tbsp
Gram flour3 tbsp
Egg1
Crushed coriander seeds2 tbsp
Pomegranate seeds2 tbsp
Crushed red pepper2 tbsp
Turmeric powder1 tbsp
All spice powder1 tbsp
Saltto taste
Oil½ liter

Method

In a bowl mix together ½ kg mince, 3 tbsp gram flour, 2 tbsp crushed coriander, 2 tbsp pomegranate seeds, 2 tbsp crushed red pepper, 1 tbsp turmeric powder, 1 tbsp all spice powder and salt to taste.
Finely chop 2 tomatoes, 1 onion, 5 green chilies and ¼ bunch of coriander leaves. Add chopped vegetables to the mince mixture.
Then add 1 egg and 2 tbsp butter. Mix very well.
Form large patties with the mince mixture. Then fry in a large griddle until golden brown.

Dahi Murgh Kabab Recipe

Recipe Ingredients

Boneless chicken ½ kg
Yoghurt ½ kg
Ginger paste 2 tbsp
Salt as required
Green chilies 8
Red chili flakes 1 tbsp
Lemon 4
Crushed black pepper 1 tsp
Bihari kabab masala 2 tbsp
Raw papaya paste 1 tbsp
Kissan ghee 1 cup

Recipe Method

Marinade the chicken with yoghurt, raw papaya paste, green chilies. Salt, lemons, ginger paste, bihari kabab masala, crushed black pepper and red chili flakes for a few minutes. Now add in ghee to it and put it on the stove to let it cook. Now as the water dries out, grease the pan and put it on for dum or give it a coal smoke.


Bahadurabad Bun Kabab


Ingredients:
Beef Mince 300 grams
Boiled Bengal Gram 100 grams
Ginger Garlic Paste 1 tbsp
All Spice Powder 1 tsp
Cumin Powder 1 tbsp
Red Chili Powder 1 tbsp
Crushed Black Pepper ½ tsp
Eggs 3-4
Bread Slices 2-3
Oil for frying
Salt to taste

For Chutney:
Mint Leaves 1 bunch
Garlic 6-8
Whole Cumin Seeds 1 tsp
Tamarind Paste 1 cup
Jaggery (Crushed) 3 tbsp
Green Chilies 4-5
Salt to taste

For Serving:
Bun as required
Tomatoes 1-2
Cucumber 1-2
Onion 1

Method:
Take a cooking pan add 300 grams of beef mince and 100 grams of boiled gram Bengal add 1 tbsp of red chili powder, 1 tsp of all spice powder, ½ tsp of crushed black pepper , 1 tbsp of ginger garlic paste and add to taste salt, mix it well cook until the water is dry. Now take the chopper add all the mixture chop it now add 2-3 bread slices mix it well and make the kebabs. Now take 3-4 eggs beat it. take a frying add oil, heat the oil in a fry pan and then add eggs dip into eggs and shallow fry the kebabs and take it out in a plate and set aside. For chutney: take a blender add 1 bunch of coriander, 6-8 garlic cloves, 1 tsp crushed cumin seeds, 1cup of tamarind pulp and blend it take it out in a serving bowl. For serving: take the buns cut into the middle now spread the chutney on the bun then place kabbab adds onion and close the bun. Now take it out in a serving platter and serve it with chutney and ketchup.

Shami Kabab Recipe


Ingredients :

2 ½ kg minced meat
2 Tea spoon full Coriander powder (dhania),
2 ½ Tea spoon full Salt,
2 cups Water,
2 medium sized onion
1 ½ Garlic, (lehsan)
2 ½ inch Ginger(adrak)
2 table spoon red chili flakes. (kuTi hui laal mirch)
2 table spoon whole black pepper Corns (sabat kali mirch)
1 ½ finger size Cinnamon (daar chini)
3 black Cardamoms (kali/bari illaichi)
20-22 Cloves (laung)
split gram lentils (Daal chana)a little more than3/4 kg for 2 ½ kg mince meat(2&1/2 kg qeema main 3pao say thori si ziada daal dalain)
Green Coriander(hara dhania) - 1 bunch
about a handful of Mint leaves (aik muThi podina kay pattay)
green chilies 5 (hari mirchain)
2 medium size onion (to be chopped with Coriander, mint and green chilies)

Method / Tarika:Shami Kabab

First grind black pepper corns, cinnamon sticks, black cardamoms & cloves (sabat garam masala) in a grinder. every thing together just open up the black cardamoms and leave their cover with them.

In the pressure cooker put minced meat,flaked chilies,coriander powder, salt, water, 2 onions(cut in four pieces), garlic and ginger.

Now add gram lentil(chana daal) to the cooker on top of minced meat.

Cook under pressure without mixing the daal with minced meat, for 3-4 min.

Then open the cooker and mix it, cook under pressure for a minute or 2.

Then open and check if there is still some water cook it till the water is dried.

Chop green chilies, fresh mint and coriander leaves and 2 medium sized onions all together in a chopper.

Now chop these along with the cooked mince and gram lentil;add bit by bit with your mince in chopper till its smoothly mixed.

Make kebabs.

For frying them, put a little oil on the griddle (tawa), dip the kababs in the egg and put them on the griddle.

Fry them till they get golden in color.

IMPORTANT NOTES:

The ratio of gram lentil for 1 kg mince is 375 grams.

After adding lentil to the mince don't mix because if you will mix the split gram lentil will stick to the bottom of the pot and burn.

Taste the prepared mince before making kebabs to add more chilies and salt to your taste.

Sometimes the kabab get scattered while frying so the TIP (TOTKA) for that is to move the kababs quickly to the area of girdle(tawa) without oil.

They can easily be frozen for a long time and the taste will stay good.

Harissa with Kebab Recipe


Ingredients

Beef Mince (Finely Chopped)

Method

For kebab’s: take ½ kg of beef mince add as required fat chop it finely repeat the process 2-3 times. Take a mixing bowl add 1 tbsp of ginger garlic paste, 1 tsp of all spice powder, 1 tsp of crushed cumin seeds, 1 tbsp of crushed red chili powder, 1 finely chopped onion, 3-4 finely chopped garlic and add as required hung curd, 2 tbsp of roasted chick peas powder, and add to taste salt, mix it well and make a mixture. Now take some mince mixture in a palm and shape it like kebab’s and fry it on a low flame and set aside. Now take a plate place the tissue paper take it out in the kebab’s and strain the access of oil when the kebab’s is dry take it out in a serving platter. At last pour the harissa in to the kebab’s and serve it.

MALAI KORMA KABAB


Ingredients:
Boneless chicken cubes 250gms
Ginger garlic paste 1 tbsp
Onion ½ cup (chopped)
Korma masala 3 tbsp
Button red chilies 5
Water 1 cup
Onion brown ½ cup
Yogurt ½ cup (hanged)
Cream 1 tbsp
Cream cheese 1 tbsp
Cashew nut 10 (grinded)
Desiccated coconut 1 tbsp (grinded)
Salt 1 tbsp
Chopped coriander 3 tbsp
Eggs 2 to 3
Water 2 tbsp

METHOD:
Boil chicken cubes with ginger garlic paste, korma masala, onion, button red chillies till tender and water dries. Remove and cool. Put mixture in a chopper with all the rest of remaining ingredients, 1 egg and chopperize. Make into small kababs dip in beaten egg and fry.

Shrimps Hushpuppies by Chef Gulzar


Ingredients
Shrimps (Chopped) 300 grams
Boiled Potatoes ( Chopped) 2-3
Garlic Paste 1 tbsp
Finely Chopped Onion 1
White Pepper Powder ½ tsp
Paprika Powder 1 tsp
Eggs 1-2
All Purpose Flour ½ cup
Maize Flour ½ cup
Finely Chopped Spring Onoin 1-2
Oil for fry
Salt to taste
Method
Take a mixing bowl add 300 grams, 2-3 boiled potatoes, 1 tbsp garlic paste, 1 finely chopped onion,1/2 tsp of white pepper powder, 1 tsp of paprika powder,1-2 eggs, ½ cup of all purpose flour, ½ cup of corn flour,1 strand of finely chopped of spring onion and add to taste saltmix it well. And add as required water to make a batter. Take a fry pan add oil, heat the oil anf fry the shrimp. At last take it out in a serving platter and serve with sauce. Now shrimp hushpuppies is ready.

Fish Seekh Kabab by Zubaida Tariq


Ingredients:
Fish 1 kg
White Vinegar 2 tbsp
Bread Slices 2
Egg 1
Red Chili 1 tbsp
Gram Flour 2 tbsp
Salt to taste
Turmeric 1 tsp
Lemons 2
All Spice Powder 1 tsp
Seekh Kabab Masala 2 tbsp
Chopped Mint Leaves ½ bunch
Chopped Green Chilies 2
Oil as required
Method:
• Make small pieces of fish, add in white vinegar and keep it for 5- 10 mins.
• Add in turmeric, salt and lemon juice.
• Grease the frying pan, add in fish pieces and let the wtare dry.
• Cool it and add in bread slices.
• Chop together.
• Add in red chili, ½ bunch mint leaves, chopped green chilies, some oil, gramflour, egg and 2 tbsp seekh kabab Masala. Mix it.
• Make kabab. Shallow fry them. Serve with chutney.

KACHRI KEBAB


INGREDIENTS:
Beef Mince ½ kg (do not wash) Onion 1 sliced Poppy Seeds 1 tbsp Desiccated Coconut 1 tbsp Roasted Gram 2 tbsp Ginger Garlic 1 tbsp Salt 1 tsp Chili Powder 1 tsp heaped All spices 1 tsp Kachri Powder 1 tsp
METHOD:
Grind together mince and onion very finely in chopper, keep aside. Dry grind poppy seeds, coconut and roasted gram and add to the mince with all the rest ingredients and grind once again, make into kababs and shallow fry. Keep the coal on simmer.

Recipe Ingredients

Liver 250 gm
Black cardamoms 2
Cinnamon 1
Coriander leaves, chopped 4 tsp
Coriander seeds, roasted 1 tsp
Cumin (jeera) seeds 2.5 gm
All spice 2.5 gm
Garlic cloves, chopped 4
Garlic paste 1 tsp
Ginger, shredded 1" piece
Ginger paste 1 tsp
Oil 60 ml
Onions, grated 60 gm
Onion paste 30 gm
Red chilli powder 2.5 gm
Salad oil 60 ml
Salt to taste
Tomatoes, chopped 120 gm
Turmeric (haldi) powder 1 tsp
Yogurt 60 gm

Recipe Method

Cut liver into 1 inch cubes. Beat together yogurt and salad oil.
Mix in ginger, garlic and onion pastes, salt and turmeric.
Add the liver pieces and leave for an hour.
Blend together roasted coriander seeds, cumin seeds, cloves, cinnamon, cardamoms, chopped ginger and garlic in a mixer with a little water.
Remove liver cubes from the marinade.
Heat the cooking oil in a flat pan and saute liver cubes gently. Remove.
In the same oil add grated onion and saute till golden brown.
Add red chilli powder to the oil with a tablespoon of warm water and stir.
Add the ginger, garlic and blended paste and the left over marinade.
Stir-cook for 5 minutes. Put liver on skewers and place on pan.
Cover and cook for 5 minutes. Finally, add chopped tomatoes.
Cook for another 5 minutes, turning skewers around a couple of times.
Cook till tomatoes are done. Remove from heat.
Transfer to a flat dish with the skewers, sprinkle with all spice and green coriander leaves.
Serve hot with any flat bread


Chicken shami kabab

Ingredients

Boneless chicken ½ kg (leg and breast)

Chana daal ½ cup soaked for 30 minutes

Ginger garlic 1 tsp heaped

Onion 1 large sliced

Whole red pepper 8

Salt 1 tsp

Allspice 1 tsp

Egg 1

Yogurt 2 tbsp

Coriander leaves chopped 2 tbsp

Green chilies 4

Onion 1 finely chopped

Water 2 cups

Method

In a pan add chicken meat with soaked chana ki daal, whole red pepper, salt, chopped onion and 2 cups water till tender and water dries. Chopperize well add in it egg, yogurt, allspice, chopped coriander leaves and green chilies, chopped onion, mix all well, make into shape of kabab, shallow fry in frying pan.


Chinese Style Chicken Shish Kebab Recipe


Recipe Ingredients

4 chicken breasts, cut in chunks
1/4 cup sugar
1/2 cup soy sauce (I use the sodium reduced variety)
1/3 cup oil
1/4 cup lemon juice
1/2 teaspoon garlic powder or 2 fresh garlic cloves, crushed
mushroom
green pepper, in chunks
1 large onion, in chunks
cherry tomatoes

Recipe Method

Mix ingredients together; marinate chicken for a minute 1 hour.
Thread veggies on skewers alternating with chicken.
Grill till chicken is cooked or bake in oven at 350° for 45 minute on a pan with water below it.
Serve with rice.



Reshmi Kebab Recipe

Recipe Ingredients

Boneless Skinless Chicken – 1 lb (approx 1/2 kg)
Heavy Whipping Cream – 1/2 cup
Ginger/Garlic Paste – 2 Tbsp
Ground Mint Leaves – 1 Tbsp
Ground Cilantro (Coriander Leaves) – 1 Tbsp
Ground Green Chilies – to taste
Salt – to taste

Recipe Method
1. In a large mixing bowl, mix together all ingredients EXCEPT Chicken.
2. Taste the mixture and adjust salt before adding chicken.
3. Add Chicken and mix well.
4. Cover and keep in the refrigerator to marinate for at least 4-6 hours (overnight if you have time).
5. Soak wooden skewers in water for 1-2 hours.
6. Pierce the chicken onto the skewers and place on a baking sheet lined foil and spray coated with oil.
7. Broil in the oven on High (on top shelf) for 10 minutes.
8. Turn chicken over and continue to broil for another 5 – 7 minutes, until light brown.
Alternate Cooking Method:
1. Add marinated chicken with all of the sauce (marinade) into a hot non-stick pan.
2. Cook uncovered and stirring continuously until chicken is light brown (caramelized).
3. Turn off stove. Cover the pan and let the chicken rest for 5 minutes before serving.

Recipe Ingredients

Minced Beef 250 g
Gram flour/Besan (Roasted) 3 tbsp
Whole coriander seeds (Sukha Dhaniya) 1 tbsp
Red Chillies 8 pieces
Salt to taste
Pomegranate seeds 1 tbsp
Fresh Coriander (Hara Dhanya) 2 tbsp
Green Chilies 2 pieces
Chopped Onions 1
Egg 1

Recipe Method

Take minced beef & add roasted basin/ gram four in it.
Also add, dry dhanya/ dry cumin, whole red chilies, & Salt.
Add pomegranate seeds (anardana), hara dhanya & green chilies.
Then add chopped onion & an egg, mix them well.
Use hands for thorough mixing.
Leave it for one hour.
Finally make round shapes of the mixture (kebab shape).
Put some chopped tomatoes over it, & fry it in pre-heated oil.
Delicious Chapli Kebabs are ready to be served.


Green Chicken Kebabs Recipe

Recipe Ingredients

Natural yogurt(low fat) 100 ml
Garlic cloves(crushed) 2
Fresh root ginger(grated) 2 tsp
Cumin(ground) 2 tsp
Coriander(ground) 1 tsp
Green chilli(chopped) 1
Coriander leaves(chopped) large handful
Mint leaves(chopped) small handful
Juice of limes 2
Salt(sea)
Chicken breasts(boned) 4

Recipe Method

Place the yogurt, garlic, ginger, cumin, coriander, chilli, chopped herbs and lime juice in a blender and until fairly smooth.
Season lightly. Cut the chicken into bite-sized pieces and place in a large mixing bowl.
Pour over the spice mixture and toss to coat evenly.
Cover with clingfilm and marinate in the refrigerator for 4-6 hours, or overnight if time permits.
When ready to cook, perheat the grill to medium high and thread the chicken pieces onto 8 pre-soaked bamboo skewers.
Cook under a preheated grill for 8-10 minutes, turning frequently, until cooked through and lightly browned.
Remove and serve immediately with a cucumber and red onion salad with halves of lime to squeeze over.


Bihari Kebab Recipe

Recipe Ingredients

1 kilo meat ( thin log slices )
1/2 cup fried onions
1 cup boiled onion paste
1/2 cup yogurt
1 tbsp poppy seed powder
4 tsps Red Chilli powder
3 tbsps Papaya paste
1/2 tsp Garam Masala
1 tsp Black pepper powder
2 tsps cumin seed powder
2 tbsps ginger paste
1/2 cup oil

Recipe Method

Take a deep sauce pan and marinate beef slices with ingredients and leave it until meat become tender
Insert them in skewers. Insert 3 slices in each skewer and then spread them lightly over the skewer to balance.
Prepare your BBQ grill and heat coal well,place 3-4 skewers on the grill, turn them during BBQ.
When they cook. place them on plate
Serve with chutney.
