Chicken in BBQ Sauce



Ingredients:
Chicken 1 kg
Mushrooms 250 gm
For the Sauce:
Onions 2
Garlic 30 cloves
Black pepper powder 2 tsp
Red chilli powder 1 tsp
Tomato puree 2 tbsp
Vinegar 2 tbsp
Dark corn syrup 1/2 cup
Orange juice 1/4 cup
Corn flour 2 tbsp
Red chilli sauce 2 tbsp
Soya sauce 2 tbsp
Worcestershire sauce 1 tsp
Brown sugar 2 tbsp
Method:
Heat oil and sauté the chicken and mushrooms. For the sauce, heat oil and fry the onion, till light brown. Stir together the brown sugar, corn syrup, corn flour and chilli powder, and then add to the onions. Add 1/2 cup of water and blend well. Add the rest of the ingredients, except for the orange juice. Simmer on a low flame for 30 minutes. Stir occasionally. Stir in the orange juice now and boil. Once the sauce reaches the desired consistency, pour it over the chicken and mushrooms, mix it well.

BBQ Lamb And Houmous Recipe

Recipe Ingredients

6 small lamb chops
A little olive oil
Chopped fresh marjoram or rosemary
Ready-made houmous
Lemon wedges to squeeze over
Green salad to serve

Recipe Method
1. Drizzle the lamb chops with a little olive oil and sprinkle with some chopped fresh marjoram or rosemary.
2. Cook under a hot preheated grill for 2-3 minutes each side, until tender but still a little pink. To barbecue the lamb chops, preheat your barbecue in the usual way until it reaches the correct temperature. Cook the chops turning once, bearing in mind you may have to adjust the cooking time slightly depending on how hot your barbecue is or how near the heat source the food is placed.
3. Serve hot with ready-made houmous, lemon wedges to squeeze over and a green salad.


Lamb Backstraps With Moroccan Salad Recipe



Recipe Ingredients

1/2 cup chopped flat-leaf parsley
1 tablespoon chopped coriander
4 garlic cloves, finely chopped
2 teaspoons harissa (see notes)
1 teaspoon dried thyme
1/2 cup (125ml) olive oil
1/4 cup (60ml) lemon juice
2 teaspoons ground cumin
2 x 350g lamb backstraps, trimmed
Moroccan salad
1/2 cup (100g) couscous
1 tablespoon harissa
100ml olive oil
1 tablespoon lime juice
1 tablespoon coriander leaves, chopped, plus whole leaves to serve
1 tablespoon mint leaves, chopped, plus whole leaves to serve
100g whole blanched almonds
2 butter lettuces, leaves separated
6 spring onions, thinly sliced on an angle

Recipe Method

For marinade, combine parsley, coriander, garlic, harissa, thyme, olive oil, lemon juice and cumin in a bowl. Add lamb and turn to coat. Chill for at least 1 hour or overnight.
For the salad, place the couscous in a heatproof bowl. Pour over 1/2 cup (125ml) boiling water, cover and set aside for 5 minutes, then fluff up with a fork. Cool. Combine harissa, 1/3 cup (80ml) olive oil, lime juice and chopped coriander and mint. Season, then set aside.
Heat remaining oil in a small frypan over medium-high heat and cook almonds, turning, for 1-2 minutes until golden. Drain on paper towel and season with sea salt.
Preheat barbecue or chargrill pan to medium-high heat, then cook lamb for 2-3 minutes each side for medium or until cooked to your liking. Remove from heat and set aside to rest for 5 minutes.
Arrange lettuce on a platter, top with couscous and almonds, and drizzle with the dressing. Scatter with extra mint and coriander leaves, and spring onions. Thickly slice lamb and serve with salad.


Tika Boti Recipe


Recipe Ingredients

Beef 1 kg
Yogurt ½ cup
Papaya paste ¼ cup
Garlic paste 2 tsp
Ginger 1 tbsp
Lemon juice 1 tbsp
All spice 1 tbsp
Green chilies paste 2 tbsp
Red chili powder 2 tbsp
Salt 1 tsp
Clarified butter 2 tbsp

Recipe Method

Take yogurt, papaya paste, garlic paste, ginger paste, lemon juice, all spice, green chili paste, red chili powder and salt mix them.
Marinate beef in this mixture.
Now put cubes of beef on skewers and grill them.
In last brush them with clarified butter.
Delicious tika boti is ready to serve.


Gola Kabab Recipe



Recipe Ingredients

Mince ½ kg
Raw papaya 1 tbsp
Ginger garlic paste 1 tbsp
Chili powder 1 tsp heaped
Salt 1 tsp
All spice 1 tsp
Green chilies 3 (grinded)
Coriander leaves 2 tbsp
Onion 1 (grinded)
Clarified butter 2 tbsp
Nutmeg ¼ tsp (grinded)
Mace ¼ tsp (grinded)
Green cardamom ¼ tsp (grinded)

Recipe Method

Put mince in a chopper with raw papaya, ginger garlic paste, chili powder, salt, allspice, green chilies, coriander leaves, onion, clarified butter, nutmeg, mace and green cardamom.
Chopperized till smooth.
Leave the mince to marinate for 1 hour in the fridge.
Put on square skewers and BBQ.

Namkeen Lamb Tikka Recipe



Recipe Ingredients

Boneless Lamb/mutton cubes 1 kg (with fats)
Black pepper powder 1 tsp
Salt to taste
Raw papaya paste ¾ tsp
Yogurt 4 tbsp
Carom seeds ¼ tsp
Clarified butter 3 tbsp (if required)
Skewers for Grilling

Recipe Method

Marinate Lamb/Mutton with all the ingredients except clarified butter for 1 hour.
When ready to cook, preheat your barbecue grill.
Take your skewers and thread on the strips of meat, just like you’re stitching.
In order for them to cook evenly, stretch the meat out a bit.
Place them on the grill.
They should only take about 8-10 minutes on each side.
Apply clarified butter with the pastry brush while grilling, if you are not using meat with fats.
Serve immediately, with lemon and onion rings.
Note: Do not overcook meat, it will become chewy and tough.


Chicken Seekh Boti Recipe


Recipe Ingredients

Chicken 1 kg (20 pieces with bones)
Ginger garlic 1 tbsp heaped
Chili powder 1 ½ tsp
Salt 1 ½ tsp
Lemon juice 2 tbsp
Raw papaya 1 tbsp heaped
Yogurt 2 tbsp
All spice ½ tsp
White cumin 1 tsp (roasted and crushed)
Oil for brushing

Recipe Method

Marinate chicken with ginger garlic, chili powder, salt, lemon juice, raw papaya, yogurt, all spice and white cumin for 2 hours in fridge.
Put on flat skewers, 3 to 4 pieces on each skewers.
BBQ when nearly done, brush with oil.
Serve immediately.


BBQ White Chicken Boti Recipe


Recipe Ingredients

Chicken Boneless ½ kg
Garlic paste 1 tbsp
Yogurt ½ cup
Cream ½ cup
Green chilies paste 2 tbsp
BBQ white chicken masala 1 tbsp
Oil 2 tbsp
Salt as required
For Garnish:
Salad leaves 3-4
Tomatoes 1-2
Onion 1-2
Lemons 1-2

Recipe Method

Cut chicken in small pieces.
Take garlic paste, yogurt, cream, green chili paste, BBQ white chicken masala, oil and salt in a mixing bowl and marinate chicken in it.
Put the chicken pieces in the BBQ sticks and cook it on a low flame then give a coal smoke.
Garnish it with salad leaves, tomatoes, onion and lemons.


BBQ Chicken Seekh Kabab Recipe


Recipe Ingredients

2 cups boneless chicken
1 medium onion
3 large cloves of garlic
a slice bread
1tbspoon of dried coriander
1tbspoon of cumin seeds
1tbspoon of Chinese salt
1 tbspoon of baking powder
3 dried red chillies
1 tbsp korrma masala
2 tbsp of powder coriander
1 tsp salt
oil for frying
coal for BBQ smell

Recipe Method

Chop all the ingredients and mix well.
Divide into 8 parts, shape the kebabs on a shashlik stick and shallow fry on a medium flame.
Heat the coal and give BBQ effect once kebabs are ready.


Husseini Seekh Kababs Mughlai Style Recipe


Recipe Ingredients

Meat 2 lb
Almonds 1 1/2 oz
Ginger 1 piece
Cardamoms 4
Garlic 8 cloves
Cream 1 pint
Roasted cumin seed 1 tsp
Milk 1 pint
Dry red chillies 6
Baby pickling onions 1 lb
Ghee 2-3 tbsp
Few coriander leaves
Pistachios 1 oz
Salt to taste

Recipe Method

Grind the ginger, garlic, cumin seed, chilies and coriander to a fine paste.
Add the salt to taste.
Cut meat into desired cubes and rub this paste over it.
Marinate for 2 1/2 hours.
Fix the meat cubes on skewers, placing an onion between each cube of meat.
Grill on a low fire till tender and browned.
In a saucepan heat the ghee, add milk, cream, finely grated almonds and pistachios.
Mix well and cook till slightly thickened.
Garnish with ground cardamoms and serve with the kebabs.


BBQ Glazed Homemade Meatballs Recipe


Recipe Ingredients

1 1/2 pounds ground beef
1 egg, lightly beaten
1 cup quick cooking oats
6 1/2 ounces evaporated milk
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon garlic powder
1 tablespoon chili powder
1/2 cup chopped onion
1 cup ketchup
1/4 teaspoon minced garlic
1 cup brown sugar
1/4 cup chopped onion
1 tablespoon liquid smoke flavoring

Recipe Method

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
In a bowl, mix beef, egg, oats, evaporated milk, salt, pepper, garlic powder, chili powder, and 1/2 cup onion. Form into 1 1/2 inch balls and arrange in a single layer in the baking dish.
In a separate bowl, mix ketchup, garlic, sugar, 1/4 cup onion, and liquid smoke. Pour evenly over the meatballs.
Bake uncovered 1 hour in the preheated oven, until the minimum internal temperature of a meatball reaches 160 degrees F (72 degrees C).


Barbequed Marinated Flank Steak Recipe


Recipe Ingredients

1/4 cup soy sauce
3 tablespoons honey
2 tablespoons distilled white vinegar
1/2 teaspoon ground ginger
1/2 teaspoon garlic powder
1/2 cup vegetable oil
1 1/2 pounds flank steak

Recipe Method

In a blender, combine the soy sauce, honey, vinegar, ginger, garlic powder, and vegetable oil.
Lay steak in a shallow glass or ceramic dish. Pierce both sides of the steak with a sharp fork. Pour marinade over steak, then turn and coat the other side. Cover, and refrigerate 8 hours, or overnight.
Preheat grill for high heat.
Place grate on highest level, and brush lightly with oil. Place steaks on the grill, and discard marinade. Grill steak for 10 minutes, turning once, or to desired doneness.


Chinese Style Chicken Shish Kebab Recipe


Recipe Ingredients

4 chicken breasts, cut in chunks
1/4 cup sugar
1/2 cup soy sauce (I use the sodium reduced variety)
1/3 cup oil
1/4 cup lemon juice
1/2 teaspoon garlic powder or 2 fresh garlic cloves, crushed
mushroom
green pepper, in chunks
1 large onion, in chunks
cherry tomatoes

Recipe Method

Mix ingredients together; marinate chicken for a minute 1 hour.
Thread veggies on skewers alternating with chicken.
Grill till chicken is cooked or bake in oven at 350° for 45 minute on a pan with water below it.
Serve with rice.



Chicken Tikka Recipe


Recipe Ingredients

Chicken 2 (Tikka Pieces)
Ginger Garlic paste 1 tbsp
Red chili powder 2 tsp
Ajwaen ½ tsp
Cumin 2 tsp
Chaat Masala 2 tsp
Vinegar ½ cup
Oil ½ cup
For Garnishing:
Salad leaves, Tomato, cucumber, Green Chilies, Onion,

Recipe Method

Roast cumin and ajwaen, and blend to form a powder.

In a mixing bowl,add chaat masala, vinegar, ginger garlic paste, red chili powder, blinded powder and oil, mix together to form a paste.

Make cuts on chicken pieces, and marinate chicken with the mixture.

Keep it aside for 1 hour.

Put the marinated chicken into a heated pan and cook by flipping sides.

Cook till water dries and color turns golden.

Now put these pieces in oven and bake for 10 minutes.

Garnish with tomato, salad leaves, and onion.


BBQ Steak Recipe


Recipe Ingredients

1 small onion, chopped
7 cloves garlic
1/2 cup olive oil
1/2 cup vinegar
1/2 cup soy sauce
2 tablespoons chopped fresh rosemary
2 tablespoons Dijon-style prepared mustard
2 teaspoons salt
1 teaspoon black pepper
1 (2 pound) tri-tip steak

Recipe Method

Place onion, garlic, olive oil, vinegar, soy sauce, rosemary, mustard, salt, and pepper into the bowl of a food processor. Process until smooth. Place steak in a large resealable plastic bag. Pour marinade over steaks, seal, and refrigerate for about 3 hours.
Preheat the grill for high heat.
Brush grill grate with oil. Discard marinade, and place steak on the prepared grill. Cook for 7 minutes per side, or to desired doneness.


Kafta BBQ Recipe


Recipe Ingredients

1 1/2 pounds lean ground beef
1 medium onion, grated
1/2 cup finely chopped fresh parsley
1/4 teaspoon cayenne pepper
1/4 teaspoon ground allspice
1 teaspoon salt, or to taste
1/4 teaspoon black pepper
6 wooden or metal skewers

Recipe Method

Preheat an outdoor grill for high heat. If using wooden skewers, soak in water.
In a large bowl, mix together the ground beef, onion, parsley, cayenne, allspice, salt and pepper until evenly blended. Divide into 6 portions, and press around one end of the skewers to form a log shape approximately 1 inch thick and 6 inches long.
Grill for 10 to 15 minutes, turning occasionally, until meat is no longer pink.

Kashmiri red chilies (soaked) 4
Chat Masala 1 tsp
Salt 1 tsp
Corn flour 1 tbsp
Lemon juice 2 tbsp

Recipe Method

Grind soaked Kashmiri red chilies finely and put in a bowl.
Mix together boneless chicken, yogurt, ginger garlic paste, chili powder, ground Kashmiri red chili paste, chat Masala,salt,corn flour,lemon juice and oil.
Leave it aside for 2 hours.
Put a burning coal with marinated chicken cubes, drop some oil on coal and cover for 1 minute.
Now remove coal and put chicken cubes on skewers, grill over open flame or BBQ
